Does salmon stand up to marinating fairly well?


I've seen all the cooking shows...don't marinate fish because it breaks it down and makes it mushy. I happen to think salmon is prety 'sturdy'.


Answers: I marinate salmon in a mix of soy sauce, sherry, sesame oil and fresh ginger all the time. Marinate for a few hours - it's one of my kids favorites. True, but don't do it overnight. Also remember is you use a citrus marinade it does start the "cooking" process, it's called ceviche Like BlueSea said, marinate for a shorter time, like 2-3 hours is sufficient for me. I like using olive oil or teriaki sauce. But I recently discovered a product at the grocery store that you might like to try. It's a seasoning that comes in a small brown paper bag and it's made by Lysander's. It's an all natural spice rub for fish, shrimp, or crab but is especially good on salmon. I coat the salmon fillet with a little olive oil and then lightly sprinkle the seasoning on it. Next, I bake the fillet in the oven at 425 degrees for 30-45 minutes and it's really good. No need to marinate.
