I want to make my boyfriend a carmel cheese cake for his birthday but cant seem to find a recipe....i tried to make one and that didnt turn out very good any sugestions? HELP PLEASE o and NOT carmel apple just carmel!

INGREDIENTS
2 cups graham cracker crumbs
1/3 cup white sugar
1/2 cup butter, melted

30 individually wrapped caramels, unwrapped
3 tablespoons milk
3/4 cup chopped pecans

1 cup semisweet chocolate chips
3 (8 ounce) packages cream cheese, softened
3/4 cup white sugar
1 teaspoon vanilla extract
3 eggs


DIRECTIONS
In a medium bowl, combine graham cracker crumbs, sugar and melted butter. Mix well and press into the bottom and 1 inch up the sides of a 9 inch springform pan. Pour on melted caramel/pecan mixture and chill for 30 minutes.
To make the Caramel Filling: In a small saucepan, combine caramels and milk. Cook over low heat, stirring, until smooth. Stir in chopped pecans. Preheat oven to 325 degrees F (165 degrees C).
In the top of a double boiler, heat chocolate, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm. In a large bowl, beat cream cheese, sugar and vanilla until smooth. Beat in the eggs one at a time. Fold 1/3 of the filling into the melted chocolate, then pour the chocolate mixture back into the filling and mix until no streaks remain. Pour into crust.
Bake in the preheated oven for 50 minutes, or until center is almost set. Place a pan of water on rack underneath cheesecake as it bakes to help keep it from cracking. Cool in oven with door cracked open. Refrigerate at least 5 hours before serving. 20 FAMOUS Chocolate Wafers, finely crushed (about 1 cup)

1/4 cup sugar

1/4 cup (1/2 stick) butter or margarine, melted

1 jar (12.5 oz.) caramel ice cream topping, divided

4 cups JET-PUFFED Miniature Marshmallows

2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened

1 tsp. vanilla

1 cup whipping cream, whipped


MIX wafer crumbs, sugar and butter; press firmly onto bottom of 9-inch springform pan. Remove 1/4 cup of the caramel topping; refrigerate until ready to use.

PLACE remaining caramel topping and the marshmallows in saucepan; cook on low heat until marshmallows are completely melted and mixture is well blended, stirring frequently. Remove from heat.

BEAT cream cheese and vanilla in large bowl with electric mixer on medium speed until well blended. Add marshmallow mixture; mix well. Gently stir in the whipped cream; pour over crust. Refrigerate at least 4 hours or until firm. Drizzle with reserved 1/4 cup caramel topping just before serving. Store leftover cheesecake in refrigerator. Oh My! Chai Coffee Cheesecake


Ingredients
5 Tbsp. Oh My! Chai?
8 oz. softened cream cheese
8 oz. thawed Cool Whip?
4 Tbsp. strong brewed coffee, cooled
1 prepared graham cracker pie crust
Creamy Caramel Sauce

Directions
Combine first 2 ingredients; blend well. Stir in coffee; fold in Cool Whip. Spoon cream cheese mixture into graham cracker crust. Cover; freeze 4 hours or overnight. Drizzle with Creamy Caramel Sauce. Makes 6-8 servings.

CRUST:

1 c. graham cracker crumbs
3 tbsp. sugar
3 tbsp. melted butter
1/4 tsp. almond flavoring

CHEESECAKE:

3 (8 oz.) cream cheese, softened
3/4 c. sugar
3 eggs
1 c. Bits O'Brickle chips
1 tsp. vanilla

TOPPING:

Caramel ice cream topping
Chopped pecans, if desired

Combine crust, butter, sugar and almond flavoring. Press into bottom of 9 inch springform pan.
Combine cream cheese and sugar, mixing at medium speed until well blended. Add eggs, 1 at a time, mixing well after each. Blend in (with spoon) Bits O'Brickle and vanilla. Pour over crust.

Bake at 450 degrees for 10 minutes. Reduce oven to 250 degrees and continue baking 45 minutes or until just set. Loosen cake from rim of pan. Cool before removing rim. Chill thoroughly and then drizzle caramel, remaining Nuts (in the bag) and nuts over top of cheesecake.

Variation: Substitute mini chocolate chips for bits and use hot fudge topping instead of caramel for a chocolate chip cheesecake.
