Can you cook them on the stove in a pan with oil, as opposed to a deep fryer? Because I don't have one..
Answers: You can fry them in a heavy frying pan, first you need to wash the potatoes, then slice them the way you like your frys to be ,put in a bowl of cold water and put in the refrigerator ,best to let it sit overnight, but as long as possible, take them out of the water , Pat them dry ,1 1/2 inch of hot oil put in small batches, you need to cook them twice to get nice crunchy French fries, so let them Fry tell they start to look a little translucent take them out fry another batch, fry all of them, go back and fry the first ones all over again, they will get crunchy brown quite rapidly with the 2nd frying. yes you can cook them on the stove in a pan i use black iron but you can use anything

2kg Large potatoes, peeled.
Vegetable oil for deep frying.
(I) Wash or soak in cold water and thoroughly dry potatoes and cut lengthways into 10mm sticks.
(II) Heat oil and lower chips into the pot a few at a time into moderately hot oil. Cover and cook for about 4 minutes, or until pale golden.
(III) Remove and place on paper towels. Repeat with rest.
(IV) When ready to serve reheat oil, and cook again in batches, until crisp and golden. Drain on a paper towels.

Potatoes needn’t be in sticks and at the end of step 2 they can be stored refrigerated several hours ahead or wrapped and frozen.
These are perfect, and I have tried and tested them. That's exactly how I made them the other day. I didn't even have a thermometer; I placed one small potato slice in the oil, and when that started to cook I could tell the oil was ready. Yes you can, but put them in cold salt water first. It takes most of the starch out and they fry better.
