Hi, I've been asked to do all the baking for a Christmas fair.
I need to do the baking 1 or 2 days before.
Can you give me ideas on what I could make?

It's for the 14 people in these flats, plus both buildings on either side, the staff and family members. So a lot of people, over 100 I guess.

My budget is max. £20.00

My budget is max. £20.00 everybody luvs fairy cakes but instead of u calling them fariy cakes u could call them rundolph cake lol and put a red smartie ontop for his nose lol.n rice crispy cakes are good and realy cheap to make need to know how many you need, and what is your budget for ingredients. If you can add that in i probably could help you.
That's a lot of ppl. I would just do cupcakes -easy. Then maybe fudge {can do that a day or so early}. Cookies decorated with colored sprinkles, green, red and white.
should do a red velvet cake; definetely do that out of a box. I have many suggestions but you have a lot of ppl. to bake for. Just remember there will be other foods there. Good Luck Mince pies covered in icing sugar, scrummy! Stollen is great, very traditional and quite simple to make and you can make a few weeks in advance. I've added a link to the recipe I use below. A favourite in the Netherlands and surrounds (and one of my family's) is a spicy biscuit called Speculaas. They are easy to make - usually done in moulds to give different seasonal shapes, but just as nice as regular biscuits. There's a recipe here ...

/6 Christmas Alaska instead of Christmas pudding. It is Baked Alaska with mincemeat and tinned peached laced in booze of your choice. your budget is quite low so you cant make something too fancy-try simple cake,cupcakes & cookies from sugar,flour, eggs and butter and add full-milk chocolate bits or put some lemonjuice-sugarpowder icing on them to make them taste better. what i sell during xmas seasons are:
chocolate chips cookies
oatmeal cookies
carrot cake
cheesecake
chocolate cake
homemade chocolate candies
brownies (toppings can be cashew, walnut, rock road)

cookies can be bake even 3 days ahead of time
brownies, cake should be bake 1 to days ahead of time
then chill in on your ref.

normally cake shelf life - 3 to 4 days on a humid weather
if its cold, it can last for 5 days
but they can be froozen to prolong their shelf life
even for a month (yes, 1month). to serve frozen goodies,
thaw it out for 1 hr then I ALWAYS DEFROST it for few seconds.

reheating it may burn the icing or the sugar on the goodies. brownies, scotch teas (oatmeal bar cookie, very easy and delicious), drop cookies (chocolate chip, cocoa, oatmeal), lemon bars, peanut butter cookies, cupcakes, mini cheesecakes with cherry pie filling when i have to make food for a lot of ppl, i generally try to go with easy drop cookies....you can make them pretty quickly with little hassle, theyll stay good for a while, and it's easy to get a LOT of them! i guess cakes are pretty good too, but cookies are rly very simple....and there are so many different types! good luck!!
