How long do you boil sweet potatoes before they are ready to whip?



Answers: Just til fork tender....... Depends on if they are whole or cubed but approximately 15-20min.. Stick a fork in one and see if it feels soft and almost mushy. I do not boil my sweet potatoes, I steam them, it takes awhile maybe 45 minutes depending on the size of your potatoes. then I peel and mash them. I would thank boiling would make it very soggy . It depends upon whether you cube them or leave them whole. If cubed, it's about 20-25 minutes on high heat. BTW, DON'T throw out the cooking water, b/c it makes GREAT stock for soups and for a healthy flavourful gravy base. Squash is even better for gravy stock, and it's FILLED with vitamins!!! I also add sea salt, pepper, garlic and a good bit of curry powder as well as lots of butter to my sweet potatoes. Tastes incredible! Do NOT use too much water when you're cooking them as you'll lose flavour and vitamins. Chop into cubes, bring to a boil then simmer gentle for 10-15 minutes or until the point of a knife goes easily through.
Drain and mash.
