410g chickpeas in water
half small red onion
25g fresh flat-leaf parsley
50g/2oz fine green beans
1 lemon, zest
1 tablespoon lemon juice
1 tablespoon olive oil
250g smoked mackerel fillets (plain or with black peppercorns)
Directions
Drain the chickpeas and peel and finely chop the onion.
Chop the parsley and cut the beans into short lengths.
In a bowl, mix the chickpeas with the onion, parsley, beans, lemon zest and juice and the olive oil.
Divide the mackerel fillets between 2 plates, serve with the chickpea salad and lemon wedges and season
If you do want to cook, then I suggest lightly grilling to keep in all of their fantastic goodness Ours are normally smoked or in tomato juice (canned)
If yours are plain, heat partially in a frypan and make some creamy leek sauce and pour over.
Simmer gently until the fish are cooked.
Or transfer to a pie dish and top with mashed potatoes and bake for awhile. THEY ARE STRONGLY FLAVORED, SO THE MORE THE BETTER It's a great fish- poach them in water with a few herbs- mind you they have a good full flavour of their own, so few extra flavours really shine through - 20min simmer usually does the trick Oh! what memories you bring back to me!
We always caught them ourselves and just fried them in butter.
Love them I like to pan fry them. Start with some flower (enough for what your are coating) add desired amount of salt and pepper, add 2 pinches of dill seed and cyan pepper. Coat fillets and pan fry. once almost cooked dab lemon juice. finish frying and serve. Add some cyan to the tarter for a little more kick. Try baking in the oven with some vinegar salt and pepper and a couple of bay leaves for 30 - 40 minutes. Cover with foil. Medium heat oven Smoked mackerel is delicious with gooseberry puree (gooseberry pie filling will do) - yes, it really is! for spicy flavour .

Enjoy The greatest way I have ever eaten mackerel was fresh out of the sea about two hours previously, gutted, split open and fried whole in a mixture of olive oil and butter. But I was living near a fishing harbour at the time. Possibly the most incredible breakfast I ever had. Mackerel is a great fish to pan fry!
Take a cup of plain flour and add a dusting of chili powder salt and black pepper.
Heat a frying pan with olive .
Light dust your Mackerel fillets in the flour mix .
Once the pan is smoking add the fish skin down . Sear for 2 minutes and turn cook for a further 2 minutes .
Take mackerel out and set a side to relax.
Add a nob of butter some fresh chili to the pan and heat. Once the butter starts to bubble add some fresh coriander .
Serve the fish on some crispy vegetables and noodles.
ENJOY!!!!!!!!!!!!!!
