Beef tenderloin with mushrooms
Portions: 8

Butter 2 oz
Onions 4 oz
Flour 1Tbsp
Mushrooms 1/2 lb
Tenderloin 2 1/2 lbs
White Wine 1/2 cup
Mustard 2 Cups
Brown Sauce 1 1/2 pt
Cream 1 cup


Answers: Just multiply everything by 2.25 or 2 1/4 since 8 times 2.25 is 18

Butter 2 oz x 2.25 = 4.5 ounces (just over 1/2 cup)
Onions 4 oz x 2.25 = 9 oz (1 1/8 cups)
Flour 1 Tbs x 2.25 = 2 1/4 Tbs (I'd probably use 2 Tbs &1 tsp)
Mushrooms 1/2 # x 2.25 = 1.125 lbs. (approx 17 ounces)
Tenderloin 2 1/2 # x 2.25 = 5.625 lbs.
White White 1/2 cup x 2.25 = 1.125 so 1 1/8 cups
Mustard 2 cups x 2.25 = 4.5 cups (That's a lot of mustard!)
Brown Sauce 1 1/2 pt x 2.25 = 3.375 pints or 6 3/4 cups
Cream 1 cup x 2.25 = 2 1/4 cups 5
