Answers: Take your recipe and times it by 1.7 and that will net you 10.2 pounds of dough. Yes, I know that's over what you want, but after you make the dough, just weigh out 10 pounds. huh? Did you consider just doubling the recipe. That way you will have two extra pounds. The exact amount would be to multiply every quantity in the recipe by 1.66 (1 and 2/3) but it might be easier to simply double it and end up with 12 pounds of dough instead. Your choice.
