How can I get a bitter taste out of my french onion soup ASAP!!?


The recipe called for one bottle of guiness beer...I've made it before...but this time my french onion soup tastes bitter...and our guests will be arriving in less than an hour!!! Help!!!


Answers: Did you get that recipe from foodtv.com? I think I saw the same one and it sounded really yummy. I agree with the other answerers...it must be the guiness you're tasting. Add a pinch of sugar, let it sit for a min or two, then taste it. If it's still bitter, repeat. I really hope it works out for you!!! Have fun with your guests. :) It sounds like the Guinness was bad... The only thing you can do is pitch it. I don't know where you got the recipe from but Guiness is definitely not recommended in any recipe for onion soup I've heard from. Add a little sugar to your soup to counteract the bitter taste Agree. add sugar, but just a little at a time. Don't want your soup to taste like a simple syrup. Sugar is definitely what you need, but I have a better idea than straight sugar. Bring your soup to a high boil and add a few whole carrots. The sugar from the carrots will transfer to the soup and help counter the bitterness. Also, adding a little worcestershire sauce or A-1 (a teaspoon at a time) will help mask the bitterness. Once the carrots are soft simply fish them out of the soup, sugar is added without the risk of adding too much. Hope that helps and good luck! just a shot in the dark here, but i know when a soup is too salty or something, they say put a chunk of peeled raw potato in for a bit to absorb the salt.
sorry i dunno if it will work with bittereness. and it may stay bitter but take away the salt

oh good luck to you Some schools of thought take 1/2 of the onions, char the crap out of them, then add in the other 1/2 fresh, so you get the color from the burnt onions and the crunch of the fresh ones.

Downside to this, is if they get TOO burnt, they will taste bitter.

Little late for this advice now perhaps... but that's for next time.

I've never seen a recipe for french onion soup that required Guiness... only sherry.

To fix the problem, you can try adding a little bit of lemon (like 1 squeeze) and then a pinch of sugar at at time to try and even out the bitterness.

Any chef that I had in school would have made you toss the whole pot and start again... once they're gone, they're gone. That's not an option for you though... so good luck!
