Creme Brulee question for the chefs?


Hi, I bought my daughter this creme brulee set, complete with the little torch thing as she wanted to make creme brulee for dessert tonight. The directions say to just at "x" amount of heavy cream & "x" amount of milk. We only use non-fat milk in our house so my question is.........if she uses non-fat milk instead of whole milk will that make a difference in the recipe as far as taste, texture, etc, or would I be better off going to the grocery store & just buying a small carton of whole milk to make this turn out correctly?

Answers: Unfortunately non fat milk will not set because it doesn't contain the fat
You will need the Cream and the at least 2% to make this correctly. the Cream contains all the sugars and fat that help make the Brulee firm, and the you can substitute the whole milk for 2% milk but not non-fat milk will not work.
Non fat milk will make the brulee runny and mussy, more like a thinned tapioca pudding instead of a firm Brulee.
It's only going to cost you about $3.00 to purchase a small container of Cream and 1/2 pint of 2% milk.
So go ahead, this ins't a dish that you will be eating nightly so little bit of fat isn't going to hurt you. Go by the recipe. Non-fat milk will change the end result.

Get the whole milk.

And good luck! You MUST use heavy cream for this. You can use nonfat milk, but it will not be as rich. You would be best off just getting a small carton of whole milk and then the same amount of cream.
