Can someone give me a recipe for Waldorf salad using only sour cream instead of mayonnaise?



Answers: A traditional Waldorf consist of diced apple, celery and walnuts with a dressing of mayonnaise with a touch of fresh lemon juice. To substitute sour cream would work if you slightly sweeten the sour cream with a teaspoon of sugar before dressing the salad. The proportions are equal -
2 green or red apples diced; 3 stalks of celery, 1/2 cup walnuts ( roast them first for extra flavor; make a dressing of 1/2 cup sour cream, 1 teaspoon sugar mixed well and blended with salad. Serve chilled. Folks mess around with the original recipe and add raisins, cranberries, and various other dried fruits and nuts. They taste alright, but they can not be called Waldorf salad. It was the magic of the mixture that brought this salad to people's homes and made it stand for goodness all these years. 1/2 cup chopped, slightly toasted walnuts
1/2 cup celery, thinly sliced
1/2 cup red seedless grapes, sliced (or a 1/4 cup of raisins)
1 sweet apple, cored and chopped
3 Tbsp sour cream (or yoghurt)
1 Tbsp fresh lemon juice
Salt
Pepper
Lettuce

In a medium sized bowl, whisk together the sour cream (or yogurt) and the lemon juice. Add 1/2 teaspoon of salt, 1/4 teaspoon of fresh ground pepper. Mix in the apple, celery, grapes, and walnuts. Serve on a bed of fresh lettuce.

Serves 2. INGREDIENTS
1 1/2 cups chopped cranberries
1 cup chopped red apple
1 cup chopped celery
1 cup seedless green grapes, halved
1/3 cup raisins
1/4 cup chopped walnuts
2 tablespoons white sugar
1/4 teaspoon ground cinnamon
1 (8 ounce) container cour cream
DIRECTIONS
Combine cranberries, apple, celery, grapes, raisins, walnuts, sugar, cinnamon, and sour cream. (I chop cranberries in a food processor, and it works great). Toss to coat. Cover and chill 2 hours.
Stir just before serving. Garnish with frosted cranberries and mint leaves if desired. For frosted cranberries, wet cranberry and roll in sugar.
