Answers: If your stoneware is ovenproof, you can use it. Make sure that it has moisture in it. What that means is that most home ovens can reach a heat of 550 degrees. If you are using indirect heat, I'm suspecting you will not be going over that. Remember, stoneware is fired in fairly high heat when it is made. You should have a thermometer in any case.
Believe it or not, clean terra cotta plant pots with no glaze can be used in a grill with indirect heat. The pot should be well cleaned and then soaked for several hours in water before putting the food in. A terra cotta plant base dish can be use for the top, and another to keep the bottom of the pot level. You will need a pot that has no hole in the bottom.
Terra cotta baking pots and casseroles can also be purchased and they are wonderful for slow cooking chicken, with wine and vegetables, etc. Source(s):

It is no designed for heat that hi. You can, but you will need to keep your heat lower.
For indirect-heat cooking on a grill, just leave one side on, and put your food on the other side.
