Easy Nacho Chicken

A Mexican-style chicken casserole, recommended by Marsi.

INGREDIENTS:

3 to 4 cups cooked diced chicken
16 ounces shredded or cubed American cheese (Velveeta or other process melting cheese)
2 cans (10 3/4 oz each) condensed cream of chicken soup
1 can (approx. 10 oz) diced tomatoes and green chilies, undrained , or use 1 can (14.5 oz) Mexican style stewed tomatoes
1 cup chopped onion
1 can (4 ounces) mild green chile peppers, optional
1/4 teaspoon garlic powder
1/4 teaspoon salt, or to taste
1/4 teaspoon pepper
1 package (14 1/2 oz) nacho cheese tortilla chips

PREPARATION:

In a large bowl, combine chicken, cheese, soup, tomatoes, green chiles, onion, and seasonings; mix well. Crush chips; set aside 1 cup of the chips for topping and blend remaining chips into chicken mixture.

Spoon mixture into a greased 13 x 9-inch baking dish; sprinkle with reserved tortilla chips. Bake, uncovered, at 350° for 30 minutes, or until cheese is melted and casserole is bubbling.

Serves 4 to 6.

Deluxe Fajita Nachos

Ingredients

2 1/2 cups chicken cooked, shredded
1 package seasoning for fajitas
1/3 cup water
8 ounces tortilla chips
1 1/4 cups cheddar cheese grated
1 cup monterey jack cheese grated
1 large tomato chopped
2 1/4 ounces olives ripe, sliced, drained
1/4 cup scallions, spring or green onions sliced
1 x salsa

Directions
In medium skillet, combine chicken, Spices and Seasonings
for Fajitas and water; blend well.

Bring to a boil; reduce heat and simmer 3 minutes.

In large shallow ovenproof platter, arrange chips.

Top with chicken and cheeses.

Place under broiler to melt cheese.

Top with tomato, olives, green onions and desired amount of salsa.

Makes 4 appetizer or 2 main dish servings.

PRESENTATION: Garnish with guacamole and sour cream.

HINT: For a spicier version, add sliced jalapenos.

Easy Nacho Appetizer Recipe

Ingredients

- 2 cups nacho chips (about 20 chips)
- 1 pound ground beef or turkey, divided
- 1/4 cup salsa, drained
- 1/2 cup cheddar cheese, shredded and divided
- 1 1/4 ounces taco seasoning mix

Directions

Lightly brown ground meat on stovetop and drain excess fat.

Prepare taco seasoning mix according to package directions and add to meat. Use 1/2 cup of meat for recipe and reserve the remainder for future use.

Arrange 20 whole nacho chips on a microwave safe plate.

Place 1/4 cup of salsa in mesh sieve or strainer to remove excess juice. Removing the juice will help to keep the chip from becoming soggy.

Use 1/4 cup of cheese to cover each chip and reserve remaining 1/4 cup for later.

Microwave for a short time to lightly melt the cheese.

Remove from microwave and add topping of 1 tablespoon of ground meat followed by a teaspoon of salsa on each chip.

Then add remaining cheese, placing an additional tablespoon of cheese over the meat and salsa on each chip.

Place plate in microwave and heat for short amount of time to lightly melt second topping of cheese.

Provide garnishes of guacamole, sour cream, slices of jalapeno peppers and black olives for chips, so they can be added if desired.

Serve immediately after preparing.

GOOD LUCK QUICK & EASY NACHOS

Easy nachos cooked in the microwave oven, with jalapeno peppers, cheese, and taco sauce.

INGREDIENTS:

* 4 ounces tortilla chips
* 1/2 cup taco sauce
* 1/2 cup shredded Cheddar cheese
* jalapeno pepper slices, optional

PREPARATION:
Place tortilla chips on a paper plate.

Pour taco sauce over chops.

Sprinkle with the shredded cheese. If desired, top with jalapeno pepper slices.

Microwave on HIGH for 1 to 1 1/2 minutes, until cheese is melted.


GROUND BEEF NACHOS

INGREDIENTS:

* 1 package of ground beef (the amount is up to you)
* 1 can of refried beans
* 1 can of tomato sauce
* 1/2 cup chopped bell green pepper
* 1/2 cup chopped onion
* 1 envelope of taco seasoning
* 1 cup of grated cheddar cheese
* 1 bag of plain tortilla chips

PREPARATION:
Heat oven to 350°. Cook ground beef in a large saucepan or Dutch oven. Add all ingredients but the cheddar cheese and chips to the pot and simmer for 10 to 12 minutes. While it is simmering, pour the chips into a casserole dish.

Spread hot mixture over the chips; sprinkle grated cheddar cheese on top and put in the oven for 20 minutes or until cheese is melted and browned.
Nacho delight recipe serves 4.

CHILI CON QUEZO NACHO DIP
Chili con queso cheese dip is made with Cheddar cheese, bell pepper, tomatoes, chili powder, and chopped onion.
INGREDIENTS:

* 1/2 cup chopped onion
* 1 cup chopped green bell pepper
* 3 tablespoons butter
* 1 can diced tomatoes (about 15 ounces)
* 1 teaspoon chili powder
* 8 ounces shredded Cheddar cheese or American cheese

PREPARATION:
Sauté onion and green peppers in butter until tender. Add tomatoes and chili powder. Simmer for 10 minutes; add cheese. Continue cooking over low heat until cheese is melted. Keep chili con queso warm in chafing dish or crockpot.

Serve chili con queso dip with taco chips or corn chips.

JAPALENO CHEESE DIP
INGREDIENTS:

* 1/2 pound shredded Cheddar cheese
* 1/2 pound shredded American cheese
* 1 large tomato, peeled, seeded, and diced
* 1 clove garlic, minced
* 12 to 16 ounces bacon, cooked crisp, drained, crumbled
* 2 jalapeno peppers, stems and seeds removed, chopped

PREPARATION:
Combine all ingredients in a baking dish; cover and bake until cheese is melted and dip is hot. Serve from chafing dish or crockpot.

To make ahead: Assemble in a removable crockpot liner then cover and refrigerate until 2 hours before serving.

Cook on high, stirring occasionally, for about 2 hours. Turn to low and serve from the crockpot. Serves 10 to 15. First of all, I just found out how to make "fresh" nachos. Take corn tortillas and quarter them. Heat about an inch of oil in deep frying pan (or you can use a deep fryer). Gently place them into oil and fry until golden brown. I believe that will make any nacho recipe better. I have a recipe if you don't see one that you're satisfied with here. Start with fresh nachos though for delicious nachos. I take tortilla chips and place them on a plate. Shred cheese over top (I use just plain cheddar cheese). Zap this in the microwave until cheese melts. Then I top with jarred salsa. Yummo.
A great dip: One pound of velveeta cheese, browned and drained ground beef or turkey and then one can of drained rotel tomatoes ... place all in a crock pot and cook until cheese melts. yummy, too!
