i like me scrambled with cheddar cheese on toated bread with bacon!!! anytime of the day
basted (meaning sunny side up, but cooked, no runnyness, yet the yolks are still soft). brunch

Lay a couple of those on some grits or hashbrowns and your talking serious hog heaven.
So this isn't the most fancy thing in the universe, nor something I would order out, but just at home on an average day.

I put an egg in a small dish with a tad of butter on top. Microwave in the oven for like 30 seconds.

Poor over a slice of toasted bread, with salt and pepper.

    I'm good...
    BREAKFAST CASSEROLE
    2 slices bread
    1/2 pound bulk pork sausage
    1/2 cup shredded Cheddar cheese
    3 eggs
    1 cup milk
    1/2 teaspoon ground mustard
    1/4 teaspoon salt
    1/8 teaspoon pepper

Remove the crust from the bread and cut into 1-in. cubes. Place in a greased 8-in. square baking dish. In a skillet, brown the sausage over medium heat until no longer pink; drain. Sprinkle the sausage and cheese over bread cubes.
In a bowl, whisk the eggs, milk, mustard, salt and pepper. Pour over the sausage and cheese. Bake at 350 degrees F for 30 minutes or until puffed and golden.
    Poached on toast-yummy!!!
half cook an egg, slap it between two bits of bread and fry the whole thing, squishing it down helps...

when its fried put under teh grill for a few minutes to brown...and use tomato sauce... mmmm egg specials
i only like fried and boiled eggs. i love them any time of day with fingers of toast spread with real butter, dipped into a runny yolk.
My grand daughter says the best way to eat eggs are soft boiled on toast. A glass of pineapple juice on the side please.

    ******TEXAS OMELET
    1/4 c. chopped Avocado
    2 tbsp. chopped green chili
    1 tbsp. chopped green onion
    1/4 c. sour cream
    1 tsp. lemon juice
    1/4 tsp. salt
Dash of bottled hot pepper sauce
    2 tbsp. butter
1 corn tortilla, torn in pieces
    6 beaten eggs
1 c. shredded Monterey or Jack cheese
Combine first 7 ingredients and set aside. In a 10 inch oven-going skillet, melt butter, add tortilla. Cook until tortilla is soft, pour in eggs. Cook for 3 to 5 minutes, lifting eggs to allow uncooked mixture to flow under. Remove from heat, sprinkle with cheese and bake in 325 degree oven for 3 to 4 minutes or until cheese melts. Spread Avocado mixture on half the omelet. Return to oven for 5 to 7 minutes more. When done, fold omelet in half on a platter. Makes 4 to 6 servings.

I like to use a glass to punch a whole in a piece of bread.

Heat and butter on a frying pan on light-med heat.
Place the bread and the center piece in the pan, crack an egg into the empty hole of the bread. Let it fry, then flip it for a few seconds. along with the center piece.

    It's really good!

Eggs over easy-over medium any time!

New Jersey dinners are excellent for that!
    In an omelette.
