Arrange potatoes and onion in an ungreased 9-in. square baking dish. Combine butter, pepper flakes and salt; drizzle over potatoes and onion. Cover and bake at 400 degrees F for 25 minutes. Uncover; bake 15-20 minutes longer or until potatoes are tender.

I dont peel the potatoes not with red the recipe sounds good I take red potatoes and cut them small and cook them until tender and drain water off and then put milk and butter over them just to cover and let it heat up its so good my granny used to make this yummy!!!!
Red potatoes don't have to be peeled. They have a very thin, edible peel.
gbcopy is right - it sounds to me like you leave the peeling on...especially for aesthetic purposes...it will make the dish more colorful!
Sounds good and like a dish I make gotten from Yankee magazine but includes a sprinkle of parmesan cheese
