Do you have a Mexican Recipe that uses Chunks of meat (stew meat) in a Red type sauce?!


Question: I would like to cook it in my crockpot, but any way would work.

sounds like you want to make red chili con carne (chili colorado).. you can cook the meat in the crock pot i usually add fresh garlic, salt & pepper & maybe some onion. when the meat is cooked you can finish it up in the crock pot but you need to make a rouge ( i am not sure of spelling) with equal amounts of shortening or lard or oil. put oil or what you choose in a skillet say about 2 tablespoons or more. heat it up. then add your flour about the same or a little more & toast the flour then get a small package of red chili & in a cup take 1.5 cups of hot water or if you have a lot of liquid (broth) you can use that. mix the chili in the hot liquid & stir in to the flour mixture mix well & add to your meat in the crock pot & cook another 45 min. or so.
Ohh well if you put mince or ground beef in with tomato paste/sauce and then put it on pasta thats really good, I cant think of anything else though

I'm puerto rican but I can refer you to a few great recipes:

Caldo De Rez (basically a mexican beef stew)
1 med. cabbage
1 1/2 lbs. stew meat
1/3 c. chopped onion
1/3 c. chopped green pepper
1/3 c. chopped celery
1 tsp. dried parsley or cilantro
1 (14 1/2 oz.) can stewed tomatoes, undrained
Salt and pepper to taste
4 potatoes, peeled and cubed
Commercial spicy hot tomato salsa (optional)

Cut cabbage into wedges. Combine cabbage, stew meat, and next 6 ingredients into a large Dutch oven. Bring to a boil; cover, reduce heat, and simmer 30 minutes or until potatoes are tender. Serve with salsa, if desired.

Or

Carne Guisado (Puerto Rican Beef Stew)
1 (8 ounce) can canned tomato sauce
1/4 cup sofrito sauce
1 packet sazon seasoning
1 tablespoon adobo seasoning
1/2 teaspoon dried oregano
salt to taste
2 pounds beef stew meat
2 cups peeled, cubed potatoes
1 cup water

In a large pot, combine tomato sauce, sofrito sauce, sazon seasoning, adobo seasoning, oregano, and salt. Simmer over medium low heat for 5 minutes. Add meat, and cook until evenly browned. Stir in just enough water to cover meat. Cover, and simmer for about 1 hour. Add potatoes, and cook for about 30 minutes or until potatoes are tender.

I love making and EATING carne guisado...pollo guisado (chicken stew) is great too. Hope this helps. Enjoy!
I would brown the meat with chopped onions ,sliced hot peppers ,some garlic . make a gravy using natural juices and oil from the browned meat and an little flour add water and tomato sauce and let simmer . As for the crockpot use it for cooking frejoe beans ,that's the only thing Mexican I can cook in mine
I usually cook it on the stove... just brown the meat then add tomato sauce, potatoes, carrots, onions, serrano or jalapeno peppers, some salt and pepper to taste.. bring to a boil and let it simmer... just stick everything you want to add in the crockpot and let it cook, the longer the better
