Avocado, what do i do with it?!


Question: any ideas on how to use avaocado? im vegetairian and dont eat fish so i'm open to anything but that!

You can peel the avocado and cut it up then put some vinegar and salt on it, DELCIOSOOOOOOOOO!
you can add tomatoes if you'd like.

Put it in salad with lots of tomatoes and mozzarella - its about your only option!
Guacamole! Delicious.

Make sure it's ripe. Halve it lengthways with a sharp knife, discard the stone, and scoop out the green flesh with a spoon.
Add a dash of lemon juice to stop it going brown.
Add a big dollop of cream cheese.
Add a dash of crushed garlic, and maybe some paprika or cayenne pepper.
Mash it with a potato masher until it is a smooth paste.

The perfect addition to a veggie chilli-sans-carne.
Make guacamole--hopefully, you have more than one. The trick to perfect guacamole is using good, ripe avocados. Check for ripeness by gently pressing the outside of the avocado. If there is no give, the avocado is not ripe yet and will not taste good. If there is a little give, the avocado is ripe. If there is a lot of give, the avocado may be past ripe and not good. In this case, taste test first before using.
SIMPLE GUACAMOLE:
2 ripe avocados
? red onion, minced (about 1/2 cup)
1-2 serrano chiles, stems and seeds removed, minced
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime or lemon juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped

Serve with tortilla chips.
you can eat just like that, slice it and enjoy.
I love guacamole or even sliced on a sandwich with cheese, sprouts and lettuce.
AVOCADO - ORANGE SALAD

3/4 c. oil
1/4 c. red wine vinegar
3 tbsp. Grey Poupon mustard
2 tbsp. honey
2 medium avocados, peeled and sliced
2 medium oranges, peeled and sliced
1 sm. red onion, thinly sliced
Bibb or Boston lettuce

Combine oil, vinegar, mustard, and honey. Set aside. Arrange avocado, orange, and onion slices on bed of lettuce. Spoon dressing over salad. Serves six.

AVOCADO AND CITRUS FRUIT SALAD

3 med. sized avocados
Juice of 1 lemon
2 oranges
2 grapefruit
12 pitted cherries

Slice each avocado lengthwise into two halves. Rub the exposed surfaces of the avocados with lemon juice to prevent discoloration. Peel the oranges and grapefruit. Cut into segments and remove the thin membrane around each segment. Arrange the orange and grapefruit sections in each avocado half and let stand 30 minutes. Decorate each half with two cherries and arrange on individual serving plates.
Guacamole Dip with Plantain Chips

Servings: 6-8
Level of difficulty: Easy
Preparation Time: 25 minutes
Ingredients
For the guacamole
4 medium Tomatoes
4 ripe avocados
1 lime, juice
0.5 small onion
2 garlic cloves
1 small bunch Coriander, chopped
3 serrano chillies, or jalapeno chillies
For the spiced plantain chips
2 large plantains
corn oil, for frying
0.5 tsp Chilli powder
1 tsp ground cinnamon
hot chilli sauce, to serve, optional

Method
1. First make the guacamole - with a sharp knife, cut a cross on the base of each tomato. Put the tomatoes in a heatproof bowl and pour over enough boiling water to cover.

2. Leave the tomatoes in the water for 3 minutes, before lifting out with a slotted spoon and plunging into a bowl of cold water. The skins will have begun to peel back from the crosses - peel them off, using your fingers. Cut the tomatoes in half, remove the seeds with a teaspoon, and roughly chop the flesh. Leave on one side.

3. Cut the avocados in half and remove the stones. Scoop the flesh out of the shells and place in a food processor or blender. Process until almost smooth, then scrape into a bowl and stir in the lime juice.

4. Finely chop the onions and garlic, and add to the avocado. Stir in the coriander and mix well.

5. Remove the stalks from the chillies and slit the chillies in half lengthways. Using a small sharp knife, scrape out the seeds, and finely chop the flesh. Add the chillies to the avocado mixture. Stir in the chopped tomatoes.

6. Check the seasoning and add salt to taste. Cover with plastic wrap or a tight-fitting lid and chill for 1 hour before serving as a dip. Accompany with spiced plantain chips.

7. For the spiced plantain chips, peel the plantains and cut off and throw away the ends. Slice the fruit into thin rounds, cutting on the diagonal to give larger, flatter slices.

8. Heat a deep-sided frying pan filled with a 1cm depth of corn oil. When hot, drop in a single plantain slice - it should float and the oil should bubble up around it straight away.

9. Fry the plantain slices, in batches, until golden. Remove from the pan and drain on kitchen paper.

10. Mix the chilli powder with the cinnamon and sprinkle over the hot plantain slices. Serve straight away with guacamole, and perhaps a small bowl of hot chilli sauce.
Avocado-Olive Dip

3 avocados, peeled, seeded, and mashed
1 can black olives, drained and sliced
1 (4-oz.) can chile or jalapeno peppers (medium to hot)
7 to 8 small green onions, chopped
3 large tomatoes (or 5 small), chopped
3 to 4 cloves garlic, minced
6 tablespoons extra-virgin olive oil
2 tablespoons lemon juice
5 to 6 fresh basil leaves, finely chopped

In a large bowl, combine all the ingredients. Refrigerate at least 2 hours for flavors to blend. Excellent served with corn chips.

I luv avos. Peel and slice them and add to salads, sandwiches, etc. Make an avocado dip or guacamole. Fish tacos - add diced tomatoes, shredded lettuce and cheese. Avocado egg rolls. Fill the hole/center w shrimp or crab salad. Here's one of my fave sites for recipe ideas:

and mush it together with the back of your fork and use it as a dip

Cut the avocado in half and get rid of the seed inside. Scoop out into a bowl. With a fork smash the avocado. Chop up a tomato and 1/2 a small onion. Put in bowl with avocado. Add garlic powder, salt, pepper and 1/2 the juice of a lemon.
Mix every thing together. You can eat with corn chips or spread it on a pita bread. Use as a spread on a sandwich.
Either way enjoy it...It is good for you!
(Oh yea you can add hot sauce or jalapeno chopped up!)

2 cans jalapeno bean dip
3 ripe avocados
2 (8 oz.) containers sour cream
1 pkg. taco season mix
Onions
Tomatoes
Peppers
Olives
Cheese
In layers add the following to a large flat pan:
2 cans jalapeno bean dip
3 ripe avocados, mashed with salt, pepper and lemon
2 (8 ounce) containers sour cream mixed with 1 package taco seasoning mix
Chopped scallions, sprinkle over 3rd layer.
Chopped tomatoes, cover 4th layer.
Sliced olives, covered 5th layer with grated cheeses. Serve with nacho chips.
make guacamoli! I guess since you're not vegan, you can have eggs, so mash up the avacado and a hardboiled egg and you can serve it on bread.
I eat it with a bit of balsamic vinegar drizzled on it. You can also add it to salads, sandwiches, and pasta (a little tomato, basil, red onion, yumm)
Make a salad with orange and onion.

With a knife, peel the orange so that the edge of each segment also comes away.
Cut it into slices across the core.
Slice an onion into rings and the avocado into chunks.
Mix all.

The combination is amazing (with or without the onion)
I LOVE AVOCADOS! YOU CAN DO SOO MANY THINGS WITH THEM. EAT THEM BY THEMSELVES, CHUNKED ON A SALAD, WHIP IN A BOWL AND USED AS A SPREAD ON SANDWICHES, SLICED AND ADDED TO SANDWICHES, GUACAMOLE IS ALWAYS GREAT.YOU CAN USE THEM FOR ALMOST ANYTHING. JUST USE YOUR IMAGINATION AND TRY NEW COMBINATIONS.
You could make guakamolie(sp?), or salsa.
actually you could throw it into just about anything, becuase by themselves, avacados dont have much flavour/
GUACAMOLE!! Its really good with Tostito Chips and salsa!
Guacamole in my opinion is the best and very healthy. With some corn chips or in a layered nacho dip. At the bottom you put refried beans cook for 25 min at 350 then add a layer of cheese cook and additional 5 min. Let cool add sour cream, guacamole salsa maybe a lil more cheese some lettuce and freshly cut tomatoes. Delicious!
there is a bar in Portland, OR - think its called "The Mint" -anyway, they make Avocado Daquiris.

Avocados are fantastic. Halve them, sprinkle with lemon or lime juice (stops the flesh going black) scoop the flesh out and use it chopped in a salad. In Peru we had them for breakfast. They were huge. I think once four of us had one. Scrape out the flesh and spread on fresh bread - season with salt/pepper to taste.
