What is a good way to prepare chicken for BBQ? Spice wise.?!


Question: Texas style BBQ chicken

* 8 boneless, skinless chicken breast halves
* 3 tablespoons brown sugar
* 1 tablespoon ground paprika
* 1 teaspoon salt
* 1 teaspoon dry mustard
* 1/2 teaspoon chili powder
* 1/4 cup distilled white vinegar
* 1/8 teaspoon cayenne pepper
* 2 tablespoons Worcestershire sauce
* 1 1/2 cups tomato-vegetable juice cocktail
* 1/2 cup ketchup
* 1/4 cup water
* 2 cloves garlic, minced


1. Preheat the oven to 350 degrees F (175 degrees C).
2. Place the chicken breasts in a single layer in a 9x13 inch baking dish. In a medium bowl, mix together the brown sugar, paprika, salt, dry mustard, chili powder, vinegar, cayenne pepper, Worcestershire sauce, vegetable juice cocktail, ketchup, water and garlic. Pour the sauce evenly over the chicken breasts.
3. Bake uncovered, for 35 minutes in the preheated oven. Remove chicken breasts, shred with a fork, and return to the sauce. Bake in the oven for an additional 10 minutes so the chicken can soak up more flavor. Serve on a bed of rice with freshly ground black pepper.

Spice Rub Chicken

Serves 4-6
Ingredients:

1 tsp of each of the following:

whole cumin seed
ground ginger
ground coriander
crushed chilli flakes
yellow mustard seed

2 tsp sea salt
3 tbsp olive oil

400-500g of chicken (it can be anything- I used chicken thighs)

Grind the cumin seed, chilli flakes and mustard seed in a mortar and pestle so that the spices are lightly crushed. Mix in the remaining spices and the salt and lightly crush some of the sea salt.

Rub the spice mixture on the chicken. Add the olive oil and rub into the spice coating chicken.

Marinate for 30 minutes or up to 2 hours.

The chicken can be grilled, roasted or pan fried; cooking times will vary depending on method and chicken cut used.
smoking or baking??????

DRY rub.........
chili powder, dried garlic, and season all salt... equal parts....

place on rack, on cookie sheet if baking...and SLOW cook at 180 degrees for 3 to 4 hours...
I know of in a pinch BBQ sauce.
Take some Cola and a little bit of garlic powder and ketchup, I prefer Hunts.Mix and use as a bbq sauce.It's as good as botttled.
Believe it or not, vineagar adds a good flavor as a marinade. Mix vineagar, honey, pepper and salt in a bowl and pour over raw pieces of chicken. Let it stand for about 15-20 min and then grill.
