Answers: I made scallops yesterday, my guest said they were great, there's some left over, they are so expensive I don't want it to go to waste any ideas for leftovers?

Heck yea! Here are two ideas.
Flake and dice the scallops and lobster and add to seasoned rice or even noodles with some of your favorite seasonings. I would lean towards Italian seasoning. OR
Take the left over lobster, mince it, add it to some cream cheese, pepper, hotsauce, minced onion and a hand full of shredded cheese of your choice. Mix well and serve with crackers, chips, and veggies.
Make crab cakes with them...just replace crab with lobster and scallops, serve them for dinner!
Yes- you can make a simple cream sauce:
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup heated milk
1/3 cup heavy cream
salt
white pepper
freshly ground nutmeg (optional)
Few tablespoons dry white wine, a few teaspoons mixed fresh herbs, Parmesan cheese, etc.
Melt butter in a saucepan over medium heat. Add flour and stir until mixture is well blended. Gradually stir in hot milk. Cook over medium heat, stirring constantly, until sauce begins to boil and thickens.
(I really like to add dry white wine to this - really enhances the flavor of the seafood)
Mix in the scallops and the lobster and seve the entire dish over buttered noodles. and a green salad on the side. Wa La! you have dinner!!

You can make a chowder and toss them in. Or even toss them in a cold salad. But my favorite is tossing them in an alfredo sauce. And you're right, can't let those scallops go to waste!
