Garlic cloves sometimes have a green core. Do you eat it or chop it out?!

Yep, you're right. You should remove it, as it has a bitter taste.

This is unless you boil the garlic, as the boiling process takes away the bitter taste.

The green core is the start of a sprout and means the garlic is maturing. Once the centre becomes bitter, it will start to turn the rest of the clove bitter too.

Saying that, the green sprouts are used in some recipes, like sushi and stir fries.

My advice?
Try it, you might like it :-)

It's doesn't matter..it's just part of the sprouted garlic. It's just as nutritious as any sprout..
it's the garlic sprouting...i keep it in it doesn't really do anything...for taste or otherwise...if you don't like it store your garlic in the dark

I never use the middle but I am not sure why,,,guess it looks like ya shouldn't...I doubt it would hurt ya or we would know to cut it out.

Chop it out, your garlic is old and getting ready to sprout. Better, yet start over with new garlic if you can. The green part can be very bitter.
The green part is new growth and generally means that your garlic is going south!

I am sure it's fine to eat, but dude, use fresh garlic. That is so old it's growing sprouts!
Being a former chef, it is known as the germ, like in all root veg, like onions and carrots have a core, it is the inner growth, and was the first thing to form.

It tends to be the strongest and sometimes a bit bitter, if you split is and remove it you can limit the odor of garlic and if cooked the taste can be kept from being bitter.
I am like u i chop it out as i think it is tough and too garlicky for me and too stringy so i always chop it out...
I have heard that it is bitter but I have used it for years and never noticed any bitterness.
The green part is the sprout that develops in old cloves, I find that they tend to have a bitter taste once they get to that point, no matter what I do with it. My preferred action to do with sprouted garlic is to plant it out in my back yard so that I have more garlic.
you can use all of the garlic glove. it's only like a stem. same as you use both the green and white part of green onions. the more garlic the better!

No harm done by using the green part along with the rest of the garlic clove,the bitterness is not overpowering &,can be ignored ,so you can do as you wish,keep it or cut it out,nutritionaly nothing to loose either way ..No doubt that this garilc is mature & wishes to sprout,preparing to send up a shoot.I would buy myself fresh garlic as soon as possible,& plant out the cloves,each one planted separetly,with skins on & tip uppermost just below the soil surface.
Gives plenty of fresh green leaves ,very like chives,but strong garlicky taste,use sparingly.
