A healthy version of rotel dip?!


Question: I can't allow myselt to eat velvetta anymore. It's so processed, but so delicious..

Is there any way to make a healthy version of rotel cheese dip? I was thinking a cheddar block with milk may have the same effect but be a bit healthier.

I know exactly the recipe you are talking about -- I also love Rotel with Velveeta as a queso dip for tortilla chips. I actually use the Mexican Velveeta to add more heat.

Blend/melt 8 oz Fat Free Cream Cheese with the Rotel.

It's actually not bad and plus you are sure you are eating something natural without all the fat.
What is a rotel dip? I have never heard of it. You're right, velvetta is very processed. I do not see why you could use a block of cheese, melted down and then add milk. Check the calories and fat content and compare them both ways. You might be better with the velvetta in that regard.

I would think twice about subbing the Velveeta with cheddar cheese. I have found that it leaves to much fat/grease from the cheese in the melted process. I really don't think you can make the dip healthier and keep that so wonderful flavor we all like.
cheddar with milk does work, but isn't the same as velveta.

shoot! the tomatos and chiles in the rotel kill whatever fats are in the cheeses!!

anything that isn't straight from the garden or straight off the beef, pig, fish, etc is "processed". the rotel is highly processed too.
You could ues the low fat version of velvetta. It taste the same just not quite as creamy, just add a little milk.
