Ckicken Pies?!

Question: I'm going to make chick pies today using shortcrust pastry, is it best to cook the bottom pastry a bit before I put the filling in?
Have you any good ideas for a tasty filling, preferably using gravy as my daughter doesn't like the creamy fillings.

Definitely pre-cook the pastry base a bit before you add the filling. I like chicken pies with mushrooms and peas to be honest. And a little bit of butter can be used in place of either gravey or cream ... just be sure your chicken is moist and tender first :)
I make home made pot pies all the time. Mostly from leftover roast, with chicken you could use the light brown chicken gravy that comes in a pouch and takes 1 cup of water . It cooks in about 1 minute. I use a few for a larger size pot pie and I also add peas, potatoes. carrots and I do brown the pastry a little first at least the bottom one. I cheat and use Pillsbury pre-made ones and it makes it a lot easier. Good luck I Hope I helped. Try a roast sometime mmmmm....
