Milkless Pumpkin Pie?!


Question: I know that there is soy milk as a subsitute but its not as thick what can I do? I need a recipe that doesn't use milk.... and if anyone knows one without soy let me know too!

Here is a recipe for pumpkin pie using tofu. I've had pie made with tofu before and it tastes great. Very creamy.

I've attempted it with soy and it was a disaster - just get the organic milk if your really needing that pie

Your best off finding a vegan bakery and asking them what they do
I am a former chef and if you are not going to use milk are you planning to use eggs, it can be done but it will be either very soild or a bit soft.

I would use some brown sugar and the spices, a bit of maple syrup is also fine, even a teaspoon of flour,or cornstarch to add body, if no eggs persey, they try an egg substitiute or just egg whites.

You can add some fruit juice like apple or cranberry to get it pour able, if not just scoop it in to the pie shells and smooth it with a spatula.

Cook it slow to allow the moisture out and let it sit for a few hour to meld and set properly, even the day before and refrigerate it, and let it come up to room temparture before serving.
