Easy "winter time" recipe:

Sprinkle with salt & pepper (garlic powder & onion powder too, if desired). Bake in oven (on a rack to drain grease) at 325 for 45-60 minutes (or till done). Remove & let rest for 10 minutes. Brush with BBQ sauce of your choice, and put under broiler (6-8 inches minimum from heat), and broil to carmelize the sauce. Remove, flip, baste with more BBQ sauce, and broil again for another 6-10 minutes...
simmer it on the stove on a pan on low for a few hours (or the oven)

Slice and serve….. Never no leftovers!
To shorten the cooking time, cover with water and add 1 c red wine vinegar, bring to a boil.

Place in an ovenproof dish, season to taste, and cover with foil, bake for 1 hour. This will remove a lot of the grease but leave you with tender ribs
Well country style implies that you dredge the chops in flour (mixed with S&P) and then you fry it in about 1 inch of oil. Make gravy from 1/2 cup of the grease and the leftover flour. Serve the chops with mashed potatoes and cover with gravy.
