Pomegranate Chipotle Pork Roast
Ingredients
2 1/2 - 3 lb. boneless pork loin roast
8 slices bacon
Pomegranate Chipotle Sauce
Directions
Place pork loin roast in roasting pan with a rack; remove any strings. Lay bacon slices crosswise over loin, overlapping slightly; tuck ends of bacon underneath loin. Roast pork at 350° until meat thermometer registers 140° about 1 hour. Brush Pomegranate Chipotle Sauce liberally over bacon; continue to roast pork until thermometer registers 150° about 10 minutes more. Remove from oven and let stand in pan 5 minutes. Slice and serve pork with additional warmed Pomegranate Chipotle Sauce. Makes 4-5 servings.

Add sauteed mushrooms, onions or bell peppers to finished soup.

Perfect Parmesan Biscuit Mix
1/2 cup cold water
1/2 cup finely shredded cheddar cheese
Directions
Combine ingredients in a small bowl; stir just until moistened. Drop dough by equal measures onto a greased baking sheet. Bake at 400° for 14-15 minutes or until lightly browned. Serve warm. Makes 6-8 biscuits.
Balsamic & Basil Asparagus
Ingredients
1/4 cup Balsamic & Basil Dipping Oil
1 tsp. butter
1 lb. asparagus, cut into 2-inch pieces
Directions
Heat first 2 ingredients in large skillet; add asparagus. Saute for 5-10 minutes or until asparagus is crisp-tender. Makes 4-5 servings.

I'm having steak for dinner.yumm.dipped in tabasco hott sauce.
i put frozen shrimp in a pan and cook them and near the time they're done i throw in some frozen snow peas
then i put those on top of some minute rice
add some soy sauce
and you have really good, fast and pretty healthy dinner

We're having bbq pork chops, baked potatoes and scalloped corn. Fudge brownies and vanilla ice cream for desert....thinking of having my parents over for desert since tomorrow is their anniversary.

I let some pork ribs simmer in the crock pot all day in my homemade bbq sauce consisting of ketchup, cider vinegar, brown sugar, ground mustard, garlic, salt, paprika, woresteshire. And I made homemade mashed potatos, and corn. I can't wait to eat, but hubby is on the phone. :(

Tonight I am trying out a new recipe. We are having bacon fried rice. It sounds like an interesting thing to try!!!
We're having corned beef brisket, instant mashed potatoes with garlic, and bacon gravy, and a spinach salad with feta and balsamic vinaigrette. I'm thinking about making curried rice but that may be too much.
I had herb garlic chicken in the crock pot with homemade macaroni and cheese and garlic potatoes with a salad and crusty italain bread.
I put 2 small pork shoulder roasts in the crock pot this morning. They marinated over night in garlic, Worcestershire sauce, cilantro, & louisiana creole seasoning. When I get home I will make some gravy and rice to go with it. some corn on the cob and dinner rolls.
I will have rum & coke for my promotion celebration after dinner!

Slow Cooker Chicken and Dumplings
4 skinless, boneless chicken breast halves, cut in half
2 tablespoons butter
1 can cream of chicken soup
1 can cream of celery soup
1 can chicken broth
1 onion, finely diced
2 (10 ounce) packages refrigerated biscuit dough, torn into pieces
1 tsp dried parsley
1/2 tsp poultry seasoning
several shakes of salt and pepper
Place the chicken, butter, soups, onion & seasoning in a slow cooker.
Cover, and cook for 5 to 6 hours on High.
About an hour before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.
