Sloppy Joe Casserole

1 lb. ground meat
1 can sloppy joe sauce
1 can mushrooms
1 package sweet cornbread mix
- Plus the ingredients needed to prepare the cornbread mix
Shredded cheese

Brown the meat and drain. Stir in sloppy joe sauce and mushrooms.

Pour meat mixture in an 8" square glass baking dish.

Prepare cornbread mix as directed. Pour on top of meat mixture.

Bake according to the directions on the cornbread mix. About 5 minutes before its done baking, top with your favorite kind of shredded cheese and then finish baking.

Its great served with corn on the side. My kids are 7, 5, & 3 and they absolutely love this meal! Plus its easy to make and very quick for a weeknight meal.

If you're feeding more than 2 adults and 2 or 3 kids, you'll want to double the recipe. My husband always goes back for seconds when I make this plus it makes a great leftover so you may want to double the recipe anyway.
SPOTTED DICK

50g / 2 oz plain flour
1 tsp baking powder
1/2 teaspoon mixed spice
pinch of salt
50g / 2 oz shredded suet
25g / 1 oz white or brown sugar
100g / 4 oz currants
50g / 2 oz fresh breadcrumbs
1 egg, beaten
4-5 tbsp milk

1. Butter a 1.5 pint pudding basin.
2. Sift the flour, baking powder, spice and salt into a mixing bowl and mix in the suet, sugar, fruit and bread- crumbs.
3. Stir in the egg and sufficient milk to produce a soft consistency that drops off the spoon in 5 seconds.
4. Turn the mixture into the pudding basin, which should be two-thirds full.
5. Cover with greased foil or a snap-on lid (the plastic container from a 2 lb Christmas pudding is worth saving for this purpose.)
6. Steam for 2 to 2.5 hours.
7. When cooked, remove the cover and allow the pudding to shrink slightly, then cover the basin with a hot serving plate, hold it firmly and invert. Lift off the basin to leave the pudding on the plate.
8. Serve hot with custard.
1/2 cup dried Italian-style bread crumbs
1 garlic clove, minced
2/3 cup grated Pecorino Romano
1/3 cup grated provolone
2 tablespoons chopped fresh Italian parsley leaves
4 tablespoons olive oil
Salt and freshly ground black pepper
1 (1 1/2-pound) flank steak
1 cup dry white wine (I used Chardonnay, but a white burgundy would work well too)
3 1/4 cups Tomato Sauce, or store-bought marinara sauce
Stir the first 5 ingredients in a medium bowl to blend. Stir in 2 tablespoons of the oil. Season mixture with salt and pepper and set aside.
Pound the flank steak until it is about 1/4" thick. Makes it easier to roll.
Lay the flank steak flat on the work surface. Sprinkle the bread crumb mixture evenly over the steak to cover the top evenly. Starting at 1 short end, roll up the steak as for a jelly roll to enclose the filling completely. Using butcher's twine, tie the steak roll to secure. Sprinkle the braciole with salt and pepper.
Preheat the oven to 350 degrees F.
Heat the remaining 2 tablespoons of oil in a heavy large ovenproof skillet over medium heat. Add the braciole and cook until browned on all sides, about 8 minutes. Add the wine to the pan and bring to a boil. Stir in the marinara sauce. Cover partially with foil and bake until the meat is almost tender, turning the braciole and basting with the sauce every 30 minutes. After 1 hour, uncover and continue baking until the meat is tender, about 30 minutes longer. The total cooking time should be about 1 1/2 hours.
Remove the braciole from the sauce. Using a large sharp knife, cut the braciole crosswise and diagonally into 1/2-inch-thick slices. Transfer the slices to plates. Spoon the sauce over and serve.
creamy corn chowder with chicken or spam

1-2 servings

1can of cream corn
4 cups of water
1 egg
chicken dice or spam dice as desired


boil water
add corn
beat egg and pour in slowly (make sure you mix th
e soup as you pour)
add meat
and a tiny bit of salt and pepper will do it

Pesto meat loaf:

Make a pesto according to the recipe below, or use your own or any other you can find.

Make your favorite meat loaf recipe, or mix bread crumbs, an egg, and maybe a little salt and pepper in with a pound or two of ground beef. Spread this meat mixture out flat, and spread the pesto mix over the top of it. Roll it up like a cinnamon roll, put it in a pan, and bake at 350 degrees for 30-45 minutes, or until it reaches 160 degrees inside. The time will vary according to your oven, how big the roll is, etc.

Serve with mashed potatoes, a vegetable, or just with ketchup. Enjoy!

And if you want something just a bit different, use a half and half mixture of ground beef and ground pork. Mix them together thoroughly, though, or when they bake, you'll have the oddest looking concoction sitting before you at the dinner table.
SPECIAL K TREATS...

1 cup Karo syrup
1 cup sugar
2 cups peanut butter
4 cups Special K cereal
Combine Karo, sugar and peanut butter in a large pot over medium heat for 15 to 20 minutes until all melted and blended together and remove from stove. Next, add the four cups of Special K cereal to mixture. Spoon onto waxed paper by tablespoonfuls; let cool and store in a cool place.

Makes 3 dozen.

1 whole chicken ,cut up into pieces,2 med. size onions,1 (28 oz) can of stewed tomatoes,1 lrg green pepper,chopped,4 tblsp olive oil, 3 tblsp paprika, 1/2 tsp salt ,1/2 tsp black pepper,1/2 tsp garlic powder,1/4 c sour cream,1 pound of medium egg noodles
In large pot over medium heat ,heat oil and onions untill onions are clear,add paprika and stir. add chicken pieces and brown. add can of tomatoes (whole can juice and all),green pepper and spices. Reduce heat and simmer for one hour to one hour and a half untill is done . Pull chicken pieces out and let cool untill you can take the bones out .. while the chicken pieces are out ,add sour cream and stir well . add the chicken pieces back in and simmer . while chicken is simmering boil water and cook noodles according to pkg directions. serve chicken over noodles. Makes a great meal and freezes beautifully as well . good luck and happy eating .
*****TEXAS STUFFED BBQ ROUND STEAK SUPREME
1 round steak
1/2 med. onion, sliced
1/2 med. green pepper, chopped
1 c. fresh mushrooms, sliced
Fold round steak; put all ingredients inside and sew front of round steak closed. Salt and pepper to taste. Cook on grill until done. Takes approximately 20 minutes on high heat. Slice in about 1 1/2 inch slices and serve with sliced grilled onions on top.

this is easy and low carb.use the low carb tortias....layout on a plate, take 2tblspoons of cream cheese starting in the middle and 1 inch from the top spread down the middle and stop 1 inch from the bottom. lay 1 pat of real butter in the middle of you spread.add 1/2 tsp.of real vanilla also in the middle of the spread then add 1 tbspoon of your favorite sugar free fruit spread, jelly or jam...fold sides over with seam turned to the bottom,cover with paper towel and micro. on high for 1min.20 sec......yum yum for snack/ breakfast/ lunch or any time!!! [ i love the blueberry spread]...enjoy

Southern-Fried Chicken

1 3 lb chicken, cut up
1/3 cup butter milk
1/4 teaspoon freshly ground pepper
1/2 cup flour
1 teaspoon salt
2/3 cup lard

1. Combine flour, salt and pepper in a paper or plastic bag. Dip chicken in the buttermilk. Shake one or two pieces of chicken in bag to coat.

2. In a large deep cast iron frying pan, melt lard over medium-high heat to 375 degrees. I use the splatter test, put a little water on your fingers and flip it into the grease, when it splatters the heat is right. Add chicken pieces and cook turning frequently until brown and crisp, 20 to 25 minutes. Drain on paler towels
