Fett.Alfredo / Homemade. Does (fresh) or (grated / as in for spaghetti) matter?!
I am sure I know the answer (fresh) but just making sure. Not going to spend the extra money if I dont have to.
Answers: Does it need to be freshly grated parmesan (like I'd grate any other cheese) or can it be the parmesan cheese you serve with spaghetti? LOLOL

Huh? I don't know what you use, but the parmesan cheese I serve for spaghetti IS fresh. Sometimes I buy it already grated (finely grated).. looks just like the stuff in the can, or I use a rotary grater, or a microplane grater/zester to grate it. I never buy that garbage in the round container. You don't HAVE to use fresh, and don't HAVE to spend the extra money. It's up to you. I couldn't say it's extra because I wouldn't buy the other stuff for use with ANY meal. But if you want good flavor for Alfredo.... well you know. :)
it must be fresh otherwise it will be nasty
You can use the grated cheese. it is the same thing and it saves You time.
Spend the extra money.
use Parmesan reggiano
Fresh, definitely. Most things are much better when fresh is used. Also, the grated stuff is usually very dry and wouldn't melt into a creamy subsistence when heated. It would be gunky.
The parmesan must be freshly grated or it will not melt properly. The manufacturers add an anti-caking ingredient to commercial pre-grated parm that keeps it from melting into the right consistency. It's a lot of work but does make it better.
