A non tomato sauce for angel hair pasta?!

Angel hair is a light pasta - sauce must have a bit of stickiness (unlike, say, orrechiette, whose serrations and indentations capture tons o' sauce, regardless).
So, olive oil + garlic <salt and pepper to taste>; olive oil + garlic + reggiano parmesan cheese <pepper to taste, the cheese is salty>; olive oil + red pepper flakes + anchovies (love the little fishies, pepper to taste, fishies is sooo salty); or, make "birds' nests" 1. boil pasta in salted water until it's not quite al dente 2. Remove, and rinse in warm water 3. toss very gently with a little olive oil 4. take up a bit of the noodles with two forks, and twirl until it forms a little nest 5. Into the nest go your ingredients! an egg, not scrambled, just sitting there and looking wonderful; salt, pepper, garlic, red pepper flakes, abundant parmesan cheese. Put in pre-heated 375 oven for 12-14 minutes, until egg is cooked. Serve with cooked, then chilled asparagus with your fave dressing, and - my taste - a decent pinot grigio.
Completely agree with the folks who recommend alfredo - it's awesome - these are just some options designed to be a little different - I've made and eaten (with friends, and they're still friends!) all these combinations - try one out!

Use a alfredo sauce...yum you could even add some chicken or veggies

or

Simmer garlic in olive oil with a pinch of red pepper flakes.

i add a carbonara sauce and serve it up with garlic bread and salad

I'd go with alfredo. It's the best non tomato sauce there is.

Or you could use a lemon-pepper sauce.
My favorite and easiest pasta dish is cooked angel hair pasta, olive oil, fresh garlic, parmesan and romano cheeses.

Cook the pasta. Drain all water off. Stir is olive oil and garlic. Stir in chesses. Finish by sprinkling cheeses on top.

Or just use Mizithra cheese.
pesto and alfredo are a little too thick for angel hair.
i think its best to go with olive oil and garlic, topped with some parmesan cheese
Pesto Sauce

3 cloves garlic
1 large bunch Basil leaves (about 2 cups)
1/3 cup pine nuts
salt
fresh ground, black pepper
1 cup extra virgin olive oil
1/2 cup Parmesan cheese

Directions
Peel and crush the garlic cloves.
Mince the basil leaves.
Blend garlic, basil, and 1/2 cup olive oil, and cheese in a food processor or blender. Use low speed and stop often to stir.
Gently blend in remainder of olive oil and the pine nuts.
Let sit for an hour before using.

other options could be olive oil with wine and garlic....
We like to use a combination of olive oil, fresh garlic, chopped onions and chopped broccoli over the angel hair. I cook the broccoli separate and add in right before tossing with the pasta.

Simple--olive oil, garlic powder, onion powder, oregano, salt, pepper, and parmesan cheese. Just mix with hot pasta. For one serving, I would use 1 1/2 to 2 T olive oil, a sprinkle of all the herbs, and as much cheese as you like. You can use butter instead of olive oil, too.
garlic butter sauce. saute some minced garlic in butter and olive oil, add a little white wine and some fresh chopped parsley. you can also add red pepper flakes, or even half an anchovy finely chopped. when you cook the angel hair, be sure to reserve some of the cooking liquid. drain the pasta, toss with the garlic butter sauce. if necessary, add some of the reserved pasta liquid to make it 'wetter'. a nice green salad and some crusty warm bread on the side. yummmmmmmmmm
