I par-boil first - drain, add butter pepper and olive oil to a small fry pan - shimmy - add more black pepper to your taste, maybe splash of tabasco or white wine - just play and go for gold with confidence.

Par-boil them first, then finish off by frying with whatever spices take your fancy!
INGREDIENTS
3 cups water
1 pound Brussels sprouts, trimmed
2 tablespoons olive oil
2 cloves garlic, minced
8 ounces pancetta bacon, diced
1 teaspoon salt
1 teaspoon ground black pepper


DIRECTIONS
Bring the water to a boil in a large saucepan. Add Brussels sprouts, and cook for 5 to 7 minutes. They should still be slightly firm. Drain, and rinse with cold water. Slice the sprouts in half, and set aside.
Heat one tablespoon of olive oil in a large skillet over medium-high heat. Add the garlic and pancetta; cook and stir for about 5 minutes, until garlic is lightly browned. Add the remaining olive oil and Brussels sprouts. Reduce the heat to medium and cook, stirring until the sprouts are well coated with the flavor. Season with salt and pepper, and cook for 5 more minutes before serving.

boil for 30 minutes then put is a pan with bacon and bacon fat and what ever spices you like (Italian goes well with bacon) and put the whole thing in the oven for 45 more minutes.
i usually boil the sprouts 1st....
in the meantime,i chop/dice some bacon & onions! add some olive oil & herbs ,& fry till bacon is done! add sprouts to the mixture in the pan once they have cooked!!!
I have never had brussels sprouts done this way but if I had to cook this, I would par boil my brussel sprouts in salted water, drain and put into a fry pan in which I had garlic sweated in butter and olive oil.
Par boil them and toss them in the frying pan with a bit of oil until toasted and sprinkle on some nutmeg. My mum does them like this and they smell lovely but taste revolting! She likes them though!!lol
Steam them for about 17 mins, depending on size.
best way to serve Brussel sprouts is to place them in tin foil with about 1 tablespoon of garlic butter, wrap it up, and grill it
Peel the skins and put in a pan of cold water and bring it to the boil. Cook for about 10-15 mins until a fork goes through them. Remove from heat and drain and let them cool.
Get your oil very hot (a wok is the best) add the sprouts, sea salt, black pepper, a few dried chilly seeds and some cumin seeds. Toss them around for about four minutes. At the last moment add some coursely chopped fresh corriander leaves and break some chunks of feta over them.
