Good, simple gumbo recipes?!


Question: I have never made gumbo by myself, and my family rarely makes it. I want a good recipe that doesn't have tons of ingredients that I have to buy. Any suggestions?

EASY CHICKEN GUMBO

3 tbsp. butter
1 can (16 oz.) cut okra, drained
1 sm. onion, chopped
1/2 sm. green pepper, chopped
4 c. chicken or turkey broth
1 can (16 oz.) tomatoes
1 sm. bay leaf
1 tsp. salt
Dash of pepper
2 c. cut up chicken or turkey, cooked
1 tbsp. snipped parsley
3 c. hot cooked rice

Heat butter until melted. Add okra, onion, and peppers; cook and stir until onion is tender. Stir in broth, tomatoes (with liquid), bay leaf, salt and pepper. Heat to boiling; reduce heat. Simmer 15 minutes. Stir in chicken and parsley; heat through. Serve over hot rice.

Simple Gumbo's are easy.. the key to great gumbo is ingredients. Most people think gumbo must have only one type of meat. Try using mulitple meats. sausage and chicken or a mixture of seafood, such as shrimp and chicken or crabs,shrimp and oysters. One important thing is use plenty of seasoning such as onion, bell pepper and celery. Using "roux" is a key factor,in making gumbo.Use enough to color and taste, but not to be over-bearing. I have even used ducks and homemade dear sausage for a unique taste. Cayenne pepper is a must to add some fire and spice to your dish. If you have the basic things needed to make gumbo, that's good, make sure the stock is cooked over medium heat for several hours for the most enjoyable taste(4 hours or more).One thing that makes a ton of difference is this,,using a stewing hen instead of a regular chicken.

Louisiana Seafood Gumbo
3 T Oil
3 T Flour
2 lg Onions, chopped
3 c Okra, chopped (if you don't like orka use file')
2 T Oil
1 cn Tomatoes
3 Garlic clove; minced
2 qt ;Water
Salt
Pepper, black
Pepper, red
1/2 c Parsley; finely chopped
1/2 c Scallion tops; finely
-chopped
2 lb Shrimp
1/2 pt Oysters
1 cn Crabmeat
Make roux of oil and flour, stirring constantly until dark brown. Add shrimp to roux and cook for a few minutes. Set aside. Smother okra and onions in oil. Add tomatoes and garlic when okra is almost done. Cook a few minutes longer, then add water and salt and pepper. Combine shrimp roux mixture with okra and simmer for about 10 minutes. Add oysters, crabmeat and whole crabs and simmer until crabs are cooked. Add parsley and green onions and simmer another 15 - 20 minutes. Serve over rice and let each person add fresh file to their taste.

Best there ever is. I'm from Louisiana and seafood gumbo is better than any other kind!!!
