What kind of rice dish goes well with meatloaf?!


Question: I have white and brown rice. I'd prefer to use the brown rice tonight. What would go good with your average meatloaf and some steamed vegetables?

BROWN RICE DRESSING

1 1/2 c. natural brown rice
3 c. chicken broth
1 c. finely chopped celery
1/2 c. chopped onion
1/4 c. butter
1 tsp. poultry seasoning
1/4 tsp. ground black pepper

Combine brown rice and chicken broth in a saucepan. Bring to a boil. Lower heat to simmer. Cover with a tight-fitting lid and simmer for 45 minutes. Saute chopped celery and onion in butter. Add sauteed vegetables and seasoning to cooked brown rice. Stir together and serve warm. Yield: 6 servings.

I had meatloaf last night!! I had green beans, mac & cheese and cornbread with mine.
Almond rice is yummy!!
Plain white rice with gravy.
Meat Loaf
1 cup of finely chopped onion
1 celery rib, chopped fine
1 Tbsp minced garlic
1 carrot, chopped fine
1/2 cup of finely chopped scallion (can substitute onion)
2 Tbsp unsalted butter
2 tsp salt (use 1 1/2 teas if using Italian sausage)
1 1/2 tsp freshly ground pepper
2 tsp Worscestershire sauce
2/3 cup ketchup
1 1/2 pounds of ground chuck
3/4 pound of spicy ground pork sausage (or use Italian sausage - 1 sweet, 1 hot)
(NOTE: many versions of meatloaf call for ground veal as well. I would experiment with a third each of beef, pork, and veal.)
1 cup fresh bread crumbs
2 large eggs, beaten slightly
1/3 cup minced fresh parsley leaves
Italian sausages.

1 Preheat oven to 350 degrees F.

2 In a large heavy skillet cook the onion, garlic, celery, carrot, and scallion in butter, over moderate heat, stirring, for about 5 minutes. Cover and stir occassionally until the carrots are tender, about 5 more minutes. Stir in salt and pepper, Worcestershire sauce, and 1/3 a cup of ketchup. Cook for 1 more minute.

3 In a large bowl, combine the meats, eggs, bread crumbs, vegetables, and parsley. Form into a loaf and put into a retangular baking pan with 2 inch high sides. Cover loaf with remaining ketchup.

4 Bake meat loaf in oven for 1 hour.
Serves 4 to 6.

BROWN RICE WITH MUSHROOMS
INGREDIENTS:
1/2 cup chopped onion
1/4 cup finely chopped green pepper
1/4 cup butter or margarine
1 can or jar (4 ounces) mushroom pieces
3 cups cooked brown rice
3/4 teaspoon seasoned salt
1/8 teaspoon pepper
PREPARATION:
In a skillet over medium low heat, melt butter. Cook chopped onion and green bell pepper in butter for 4 minutes. Add remaining ingredients; cook until hot and lightly browned, stirring occasionally.
Serves 4.
Beefy Onion Rice

INGREDIENTS:

* 1 can (10 1/2oz) beef consommé
* 1 can (10 1/2oz) condensed French onion soup
* 1/4 cup melted butter
* 1 1/2 cups long-grain rice
* 1/4 cup chopped green onions
* 8 ounces sliced mushrooms

PREPARATION:
Combine all ingredients; stir well. Pour into a lightly greased 2-quart baking dish. Cover and bake at 325° for 1 hour and 10 minutes or until done. Serves 6 to 8.

I've made this with and without the mushrooms..not the canned kind..

We liked it..
