How do you make bruchetta?!


Question: Classic bruschetta is an Italian appetizer of toasted bread slices rubbed with olive oil and garlic and topped with diced tomatoes, basil, salt, and pepper and served warm or with melted cheese on top.

CLASSIC BRUSCHETTA

Toast the bread under the broiler if you don't have a grill pan. Use a light hand to rub the garlic over the toast slices, or the pungency of the garlic will overwhelm the fruity olive oil.

6 oz. Italian bread diagonally cut into 6 slices
3 garlic cloves, halved
1 tbsp. extra virgin olive oil
1/2 tsp. dried basil or oregano
1/4 tsp. salt

Heat a grill pan over medium-high heat. Place the bread slices in pan; cook for 2 minutes on each side or until lightly browned. Rub 1 side of each toast slice with the cut sides of garlic cloves.Discard garlic. Drizzle bread with olive oil, and sprinkle with dried oregano and salt. Makes 6 bruschetta.

BRUSCHETTA POMODORO

2 c. minced plum tomatoes
2 tbsp. chopped kalamata olives
1 tbsp. chopped red onion
1 tbsp. chopped fresh basil
1 tbsp. extra-virgin olive oil
1/4 tsp. salt
1/4 tsp. balsamic vinegar
1/8 tsp. pepper
10 (1/2-inch-thick) slices diagonally cut French bread baguette, toasted

Combine all the ingredients except French bread; cover and let stand 30 minutes. Toast the French Bread. Drain the tomato mixture. Top each bread slice with 1 tablespoon of tomato mixture. 10 servings.

MUSHROOM AND PARMIGIANO BRUSCHETTA

1/2 c. chopped plum tomato
2 tbsp. red wine vinegar
1/2 tsp. sugar
1/4 tsp. crushed red pepper
1/8 tsp. salt
10 thinly sliced basil leaves
2 tsp. butter
1/3 c. sliced mushrooms
1/4 c. chopped green onions
1 garlic clove, minced
8 (1/2-inch-thick) slices diagonally cut French bread baguette, toasted
1/4 c. (1 oz.) Parmesan-Romano Grated Cheese

Combine first 7 ingredients in a medium bowl; set aside. Melt butter in a medium nonstick skillet over medium heat. Add mushrooms, onions, and garlic; cook 5 minutes or until tender, stirring frequently. Add mushroom mixture to tomato mixture; toss well to combine. Spoon about 1 tablespoon mushroom mixture onto each bread slice. Sprinkle evenly with cheese. Serve immediately.

mainly you dice tomatoes and add fresh herbs and spices to top toasted bread...its great with tomato, eggplant, bell pepper...oh man

slice a baguette into round slices, brush it with olive oil and put in the oven until its toasted, chop up some tomatoes and put that on top of the baguette, along with some chopped basil, sprinkle with some grate parmesean and put back in the oven until the cheese is melty. serve warm and enjoy!

Cut your French or Italian bread on the diagonal (more surface area). Brush each side with olive oil and bake in oven on 350 until they start to turn brown. Meanwhile, chop tomatoes, mince onion and green pepper, and mix with some olive oil, garlic and onion powder, salt and pepper, and oregano or basil. I also sprinkle in some store-bought parmesan. When bread is done, arrange on platter. Scoop some of your mixture on each and top with fresh grated parmesan (the real thing).
Bruchetta simply means on toast or bread. But silly people now think it means Tomatoe,basil,onion, EVO, garlic and S+P
BRUSCHETTA

1 tbsp salt (or less to taste)
1 tbsp pepper
1 tbsp sugar (optional)
2 tbsp basil (preferably fresh)
1/8 tbsp minced garlic (more if desired)
2 large chopped tomatoes
1/2 cup extra virgin olive oil

First, remove the juice and seeds from the inside of the tomatoes. It will be juicy enough with the olive oil. Chop the tomatoes, set aside. Mix salt, pepper, sugar, basil, garlic, and extra virgin olive oil. Pour the mixture over the tomatoes.

Toss tomatoes to make sure they are all coated, and let stand in the refrigerator for at least 1 hour to let the flavors blend.

This is great to go on Italian breads, including garlic bread. It's wonderful with some Parmesan or mozzarella cheese sprinkled on top.

Bruschetta is a great appetizer or side dish to go along with all of your Italian favorites.

Tip: You may want to adjust the amount of salt in your bruschetta according to how salty your bread is.
