My favorite just cook it up with a dry rub spice mix and slab some miracle whip and pepper on wheat bread andd mmm tasty especially with some sliced cuckes on it too. The key is the miracle whip LOL

Throw it in a slow cooker with a cream soup any kind you like, spices that you like and veggies. I know sounds gross but it is very good.
I like cream of asparagus with some asparagus and Lipton onion soup mix over rice, cook it for like 6 hours or so until the chicken is done and pour it over rice.
You can also put it over bread or potatoes whatever you have on hand. :)
A great stew or chicken and dumplings. Or you precook it and then add it to spaghetti sauce to slow cook and marinade in it. Good luck!
So, just tonight I was wondering the same but with 3 chicken breasts. How to feed 6 on that? Well, I chopped up the cooked chicken, added to a skillet of sauteing cabbage and onions and added a bottle of Thai Peanut sauce, a dash of Ginger Soy marinade and a 1/2 c. water. I also added some pea-type beans I bought at farmers market for more protein and served over fried brown rice. I topped it with some homemade yogurt, cilantro and more cayenne (for me, I like it REALLY spicy). All the kids loved it and there's "dovers" for hubby to take to work tonight...
Dip your boneless, skinless chicken thighs in cornstarch seasoned with salt, pepper, and using an electric frying pan, fry them in olive oil to brown
While browning sprinkle with a little garlic powder and ginger.
When golden brown but not fully cooked remove them to a plate to wait.
In the drippings in the pan add sliced onions, chopped red sweet pepper chunks and mushrooms sliced
Saute for 15 minutes. Bring back the waiting browned chicken to the pan
Add 1 1/2 cups chicken broth that you have mixed using soup base or ready made in a box from the grocery store.
Add 1 tsp cornstarch to thicken slightly and a little more ginger (1/4 tsp.) more broth if necessary. Stir gently and allow to cook for 1/2 hour until done. Serve over rice or pasta noodles. Tell me this dish is not delicious, but I bet you can't..
Add spices, cook till done,cut into small pieces, put back in pot you used to cook and add some raw rice, cook till rice is done - serve with salads or pakes potato or veggies
