I made Ina Garten's 40 Garlic Clove chicken today, but the chicken came out rubbery. Why?!


Question: I looooveee Barefoot Contessa food...

Notes -
1. I used a pot, not a Dutch Oven.
2. I had to get frozen thighs/legs (6)
3. Everything went pretty well - the sauce came out great, it looked realllllllllllly good...it's just that you couldn't chew the chicken, lol.
4. I live/work in China right now, so I don't have the option of free-range or even fresh. There is one store. They have frozen chicken parts - that's about as good as it gets here.
5. Also don't have the luxury of baking - my oven is tiny and electric. It's like a nuked up easy bake oven, if you can imagine that.

Was it the chicken? Or was it something I did wrong? I followed the recipe to a T, and I know it's great; my mom's made it properly in her dutch oven.

Sounds like the chicken was cooked too long. The recipe says "Cover and simmer over the lowest heat for about 30 minutes, until all the chicken is done" after it was browned. Did you simmer it longer? Or maybe 30 minutes was too long for the size of the chicken pieces you used. Try simmering it less time than you did...check it after 20 minutes and see if it's done next time. And make sure it's simmering at the lowest heat...not boiling.
you have to use a real chicken, not a rubber one.
you can't find fresh chicken anywhere? are you sure? how strange...
sorry about your chicken though, I think it has something to do with your oven, must be the wrong temperature setting.
Sounds like the chicken was cooked too long.
