There is really not a right or wrong potato to use when making the best french fry. The one that you prefer best (your own taste) is the one to chose. I like to use the white potato over the red one when I am making french fries myself. This is how I like to make homemade F.F. They turn out crisp and not soggy.

Homemade French Fries

Peel and cut up the amount of potatoes you wish to use
rinse
salt and pepper
with a bit of water still on potatoes sprinkle with flour and toss
fry flour covered potatoes in hot oil
drain and eat hot

sweet potato.. for sweet potato french fries.. yummy!

The best potato for making french fries are varieties with HIGH SOLIDS. Since most of us don't have equipment to measure solids just buy Idaho Russets (or any Russets) and that will do.
there are so many better things to do with a potato. get creative by looking up potato recipes on the internet. my fave is the Yukon Gold.

I would fry them and it seem the whole neighborhood would come around lol... LISTEN WHILE YOUR ARE PEELING THE POTATOES WARM UP THE OIL I USUALLY PUT ABOUT HALF A PAN OF OIL JUST TO COVER THE FRENCH FRIES.. WHILE YOU ARE RINSING THEM OUT TURN THE FIRE DOWN TO MED.. CAUSE YOU WANT THEM TO TURN BROWN OOOOOOH I THINK I WILL MAKE SOME LOL...
I have used Idaho potatoes all my life for homemade french fries. They are great.
I personally like kennebec potatoes for french fries. In-N-Out Burger in California uses these or regular russets.
A NORMAL POTATOE USUALLY WORKS FOR NORMALFRENCH FRYES.
NO NEED TO BUY SPECIAL POTATOES!

Depending on where you live the best potatoes to make fries are Idahos and Russets. It is the same potato with a different name.

Russet potatoes are the most widely used potatoes in North America. Note that “Idaho Potato” is a registered trademark; the same potato grown outside Idaho must be called a russet. They have thick, netted brown skin and white flesh. Their low moisture and high starch content make them light and fluffy when cooked. They are excellent for baking, French fries, and mashing. European chefs often return home with a bag of russets, because they are unlike any European potatoes.

Yukon Gold is also very delicious as fries.

At any cost avoid New potatoes the result is awful in the deep fryer.
