The Best Coleslaw Recipe
1 small head cabbage, shredded (about 1 pound)
1 medium carrot, grated
? cup sugar
? cup mayonnaise
1/3 cup olive oil
? cup cider vinegar
1 teaspoon prepared mustard
1 teaspoon celery seeds
1. Combine the cabbage and carrot in a large bowl.
2. Mix the sugar, mayonnaise, olive oil, vinegar, mustard and celery seeds in a small bowl; whisk to blend. Toss the mayonnaise mixture with the cabbage mixture. Serves 10.

CREAMY CONFETTI COLE SLAW

2 1/2 cups thinly sliced red cabbage
2 1/2 cups thinly sliced green cabbage
1/2 cup chopped yellow or red bell pepper
1/2 cup chopped carrot
1/3 cup chopped red onion
8 ounces reduced-fat Cheddar cheese cubed
1/2 cup fat-free mayonnaise
1 tablespoon red wine vinegar
1/3 cup Equal? Spoonful*
1/4 teaspoon celery seed
Salt and pepper
Lettuce leaves (optional)
Combine vegetables and cheese in bowl. Mix mayonnaise, vinegar, Equal? and celery seed; stir into cabbage mixture. Season to taste with salt and pepper.
Spoon mixture onto lettuce leaves, if desired.
Makes 8 servings.
Tips:
Packaged cole slaw vegetables can be used; use 6 cups vegetables and add onion, cheese and mayonnaise dressing as above. Any desired flavor of reduced-fat cheese can be substituted for Cheddar cheese.

4 c. shredded cabbage
1/2 c. julienne carrots
1/2 c. julienne green peppers
1 tsp. sugar
1/2 tsp. dry mustard
2 tbsp. vinegar
1 c. mayonnaise

1 tsp. celery seeds
1 tsp. salt

8 tbsp. sesame seeds, toasted
1 can crushed pineapple, drained

Prepare dressing ahead and refrigerate. Mix sugar, salt, pepper, vinegar and seasoning in top of chicken noodles, heat until sugar dissolves. Cool and then add Miracle Whip and mix well. Refrigerate. Shred cabbage fine, add onions. Add dressing, let set awhile. At last add the broken noodles, almonds, sesame seeds and pineapple

INGREDIENTS:
4 to 5 cups shredded cabbage, about 1 medium head
1 medium green pepper, thinly sliced
3 carrots, coarsely shredded
2 tablespoons grated sweet onion
1/4 cup sugar
1/2 teaspoon salt
1/4 cup vinegar
2 tablespoons vegetable oil
mayonnaise, if desired
PREPARATION:
In a large bowl, toss cabbage, green pepper, carrots, and onion. Cover and chill thoroughly. In a small bowl, combine sugar, salt, vinegar, and oil. Pour over vegetables and toss before serving. If creamier coleslaw is desired, stir in some mayonnaise, a little at a time, until creamy.
Makes about 5 to 6 cups of coleslaw.
This is not exactly a cole slaw, but it is a salad made with cabbage. It gets raves wherever I take it. I like it much better than cole slaw, and with no mayo, there is no worry about it spoiling.
Thai Salad
2 packages Ramen noodles – crushed – do not use seasoning packet that comes with the noodles
? cup sunflower seeds
? cup slivered almonds
? cup (I stick) butter/margarine
Sauté all above until golden, set aside to cool
Chop 1 head Napa cabbage
Chop 1 bunch green onions
Dressing: Mix together:
1 cup oil
1 cup sugar
? cup white vinegar
2 tablespoons soy sauce
1 teaspoon garlic powder
Combine all ingredients just before serving
