1 box yellow or chocolate cake mix
2 eggs
2 c. dairy sour cream
1/3 c. apricot or strawberry preserves
Preheat oven to 350 degrees and line 24 muffin cups with paper liners. In large bowl, combine cake mix, sour cream,
and eggs. With large spoon (not mixer), stir until well blended. Set aside 1 1/2 cups batter. Spoon batter into muffin cups, filling halfway. Use back of spoon to make small indention in the batter. Fill with 1/2 teaspoon preserves. Use remaining batter to cover evenly - cups should be 3/4 full. Bake 20-25 minutes or until tops spring back when touched. Cool 1-2 minutes before removing from pan.
EASY BROWNIE CUPCAKES
1 c. butter
1 1/2 c. chopped walnuts or pecans
1 1/2 c. sugar
1 tsp. vanilla
1/2 c. chocolate chips
1 1/4 c. unsifted all purpose flour
1/4 tsp. salt
4 eggs
Melt butter and chocolate chips over very low heat, stirring constantly. Stir in nuts. Set aside.
Mix flour, salt and sugar in large bowl. Add 4 eggs, beaten and vanilla. Stir in chocolate mixture; mix well.
Arrange approximately 20 cupcake holders in cupcake pans. Fill about 2/3 full. Bake at 325 degrees for 25 minutes. Cool. Leave plain or sprinkle with powdered sugar. NOTE: These are great plain. They really don't need to be frosted.

1 box cake mix
Make cake mix according to package for 24 to 30 cupcakes. Any flavor works (fill 2/3 full).
FILLING:
1 (8 oz.) pkg. cream cheese
1 egg
1/3 c. sugar
Dash salt
Beat filling ingredients together (mix in 1 cup chocolate chips if desired). Drop teaspoonfuls in unbaked batter cupcakes. Bake cupcakes according to package instructions.

1 1/2 c. flour

1/3 c. cocoa
3/4 tsp. salt
1 tsp. baking soda
1/2 c. buttermilk or sour milk
1/2 c. Wesson oil
1 egg
1 tsp. vanilla
1/2 c. boiling water
Sift flour, measure and re-sift 3 times with sugar, cocoa, salt and soda, the last time into a bowl. Add butter, milk, oil, egg and vanilla. Beat until all ingredients are blended. Add boiling water and beat 1/2 minute. Spoon the batter carefully into greased cupcake pans, filling them half full of batter. Bake 17 to 20 minutes in a moderate oven, 350 degrees. Makes 8 to 10 medium cupcakes.

Rich, Fat-Free Chocolate Cupcakes
(Makes 18 cupcakes.)
Ingredients
2 1/2 cups all-purpose flour
2 cups sugar
2/3 cup unsweetened cocoa powder
1/2 tsp salt
6 Tbsp applesauce
2 1/4 cup skim milk
1 tsp vanilla extract
2 tsp baking soda
Instructions
Preheat oven to 375 degrees. Whisk together dry ingredients. Combine wet ingredients. Stir wet into dry until well blended. Grease muffin tins, pour mixture evenly into tins. Bake for 25 mins, remove from pan and place on rack to cool.

Take them out and frost them.
tastes delicious and you can mix and match the sodas. make sure the flavors would taste good together.
Get a box of Spice cake or even chocolate and white cake mix. Take a can of REAL pumpkin mix, NOT the premixed stuff for a pie. Mix them together and cook them per the box, IE time and temp.
There are no eggs or oil mixed in, so the fat that's in the cake mix is the only fat!
They are MOIST and really good!
