1 cup self-raising flour;
1/4 teaspoon carb soda;
2 tablespoons of sugar;
2 eggs;
3/4 cup buttermilk or milk;
1 tablespoon of melted butter.

Beat all together and get cooking.

Bear in mind that this is an Australian recipe and might not be like Americans prefer pancakes. But at least it's easy!
Is it pancake day already? I've been sat here longer than I thought.....
Get a box of Bisquick and use their recipe. It's better than any homemade recipes I have tried.

Then jazz it up, make it your recipe by adding smashed banana or blueberries or chocolate chips or vanilla bean pod seeds, or for extra creaminess, a little sour cream! Try adding a tablespoon or two of quick cooking grits and use buttermilk instead of milk! Tastes like IHOP!

I have always used Bisquick or Aunt Jemima mix. They are both great. Make sure you have the pan nice and hot before you pour the mix. I use butter to grease the pan (just a bit before you pour each pancake) although some people use oil. I think it tastes better with butter. Try to pour the mix in the middle of the pan, unless you are using a griddle, then you will probably be making more than one at a time. When the pancake is bubbly and golden brown around the edges, flip it. After flipping it should only take a minute or so on the other side to be cooked all the way and fluffy, yummy ready to eat! Top with a light spread of butter if you like, then pour on the Log Cabin syrup and dig in ; )
