taco meat can be prepared and then frozen and just heated in microwave
you can pre-slice chicken for chicken fajitas with seasoning and then freeze
i've made pulled pork or beef and frozen.... cook a roast in crock pot slow for an 8-10 hour day.... pull meat and shred and place in bbq sauce or beef broth and freeze. thaw reheat again in microwave....
casserole dishes with pasta also freeze well, most often though when freezing with pasta or rice I always add more liquid sauce because the pasta and rice absorb so much.

My personal favorites to make ahead and freeze, are hearty chilis and meat based pasta sauces. Soups freeze very well too - all you need to do is store them in an air tight container. I have one of those great vaccumn bag storage things, and that works brilliantly.
Edit: if using a vaccumn bag, just drop the whole sealed bag into boiling water until the contents are at the temp. you desire, and serve. Extremely easy.
