I am trying to make chocolate covered oreo cookies and need help getting chocolate to right consistency?!
Answers: I bought melting chocolates and followed the microwave directions but still can not seem to get a flowing consistency, help.
Due to many variations in microwaves (wattage, rotation,warming and heat temps) it is not advisable to try and melt chocolate using it, if you not wanting it to seperate or become scorched. Best method would to make a double boiler. Easiest would to take a small pot with about an inch of water in it, then either place a metal bowl over top of pot to the point where it doesn't make contact with the water, yet seals up all side of pot. Heat water to just below boiling point and add chocolate ships to bowl...allowing the steam from the water to warm the bowl, you will need to stir the chocolate conatantly and gently as the chocolate melts. this will give you the smooth consistency you are looking for. Obviously you have already melted them, so I advise you to just add some butter to the melted chocolate. One tsp at a time until it is the consistency that you need it to be. This should work most successfully ! I've done it. Good luck.
I make chocolate covered oreos all the time. What I do is make a double boiler. I get a small saucepan & fill it about half-way w/water & let it boil. I then use a small metal bowl and place it on top. This keeps the chocolate from scorching. I add chocolate chips (milk chocolate, semi-sweet, whatever you want) and about a tsp of crisco and let it melt together. You can add the crisco a very little at a time until you get the right consistancy. Not too much or it'll taste nasty. Then drop the oreos in it and get them covered really well. Place on a piece of waxed paper & put in the fridge to let it get really hard. Well, good luck!
The one that works for me when I need a dipping chocolate is ::
12 oz package chocolate chips
1 slice paraffin wax
Melt the two together in a double boiler and after it is completely melted, keep it on low and dip anything you want to in it. Place on waxed place and set. I always refrigerate anything that I dip so it will set really well
Melting chocolate often will not flow. They make different kinds. Some get quite liquid while others stay rather thick. If possible, try another type. If that's not possible, then adding some melted butter might be your best bet.
Don't be afraid of using the microwave. The most important thing with the microwave is patience. You MUST take your chocolate out and stir it often and do not get it hotter than you can stand to touch. All types of chocolate scorch easily and if it's too hot to touch, you may have already ruined it. Just heat it slowly and gently until it's as fluid as you need it and then stop heating it.
