HOMEMADE CHICKEN NUGGETS

1 or 2 3 lbs bags of boneless chicken breasts
1 large can of seasoned bread crumbs
garlic powder, seasoning salt, onion salt, paprika
7 to 10 eggs
vegetable oil

In one good size bowl scramble all of your eggs together and then in another bowl put your bread crumbs and seasonings in and mix together (season to your family's taste) then get out a frying pan fill half way with oil, turn on so it can get hot. Dredge the chicken pieces in the eggs and then mix around in the bread crumb mixture.
When oil is reached about 360°F start deep frying.


FRENCH FRIED ONION RINGS

3 large Spanish onions
vegetable oil
1/2 cup milk
1 egg
3/4 cup all-purpose flour
1/2 teaspoon salt

Peel onions under running cold water. Cut into 1/4 inch slices and separate into rings. Heat oil (1 inch) in 3-quart saucepan to 375 F.
Beat remaining ingredients with hand beater until smooth. Dip each ring into batter, letting excess drip into bowl.

Fry a few onion rings at a time in hot oil, turning once, until golden brown, about 2 minutes; drain.

cut the chicken into small nugget-sized pieces. in a large bowl, drench chicken with evaporated milk, salt, and pepper. sprinkle in a little self-rising flour to make the chicken a little pasty.in another bowl, place self-rising flour, seasoned salt, and pepper and mix together. take the chicken and dredge in the flour bowl, coating it well. cook the nuggets in oil in a frying pan that has been heated already (make sure the oil is hot before you place the nuggets in). cook until golden and crispy.

and here's a light recipe for beer battered onion rings:

2 large onions, peeled (about 1 1/2 pounds)
2/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon freshly ground black pepper
1/3 cup flat beer
1 large egg white, lightly beaten
1 1/2 tablespoons vegetable oil, divided
Cooking spray
1/4 cup ketchup
Preparation
Preheat oven to 400°.

Cut the onion crosswise into 3/4-inch-thick slices, and separate into rings. Use 16 of the largest rings; reserve remaining onion for another use. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, salt, paprika, and pepper in a medium bowl. Stir in beer and egg white (batter will be thick). Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Dip 5 onion rings in batter, letting excess drip off. Add onion rings to pan; cook for 2 minutes on each side or until golden. Place the onion rings on a jelly-roll pan. Repeat procedure of dipping onion rings in batter and cooking in remaining oil, ending with 6 rings. Coat the onion rings with cooking spray. Bake at 400° for 10 minutes or until crisp. Serve rings with ketchup.
