Homemade Brownies?!
Answers: I need some recepies for homemade brownies. All I can seem to find are recepies for cream cheese brownies. I need pure chocolate. I need receipes for both fudgy and cake-like brownies. Thanks in advance!
Look in the Betty Crocker cookbook, or on the back of the Hershey's cocoa box; both have basic recipes that are similar and very good. Or you can also do the Baker's chocolate recipes; the difference is in the amount of flour and egg between fudgy and cake-like

CARIBBEAN FUDGY BROWNIES
1/2 cup butter
3 ounces unsweetened baking chocolate
1 1/4 cups sugar
1 teaspoon vanilla
1 teaspoon spicy or dark rum
1/8 teaspoon Jamaican allspice (optional)
2 eggs
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Pre-heat oven to 350°F.
Grease 8 inch square baking pan, greasing only the bottom and leaving the sides ungreased.
In a medium saucepan, stir together chocolate and butter over low heat setting until smooth, about 5 minutes. Remove from heat. Stir in sugar.
Whisk in eggs, one at a time, stirring well after each addition. Stir in flour, baking powder and salt, vanilla and rum; stir only until mixture is smooth and all ingredients are combined.
Spread mixture into baking pan.
Bake for 25 to 35 minutes or until brownies just begin to pull away from sides of pan. Watch carefully near later stage of cooking period to prevent overbaking or brownies may become dry. If your brownies consistently are dry or overbaked, try reducing oven temperature by 25 degrees.
Allow to cool before slicing into squares
CAKEY BROWNIES
3 ounces unsweetened baking chocolate
1/4 cup butter, softened
3/4 cup sugar
2 eggs
1/4 cup milk
1 tablespoon molasses or corn syrup
1/2 cup flour
1/2 cup pecans or walnuts
1 teaspoon vanilla
1/2 teaspoon rum
1/2 teaspoon baking powder
1/4 teaspoon salt
Pre-heat oven to 350°F.
Grease bottom only of an 8 inch square baking pan.
Melt chocolate in small saucepan or microwave, stirring occasionally until smooth.
In a separate bowl, beat butter using a wire whisk until it becomes light, gradually adding sugar until well combined. Stir in eggs, one at a time, beating well after each. Add milk and molasses or corn syrup. Add chocolate. Beat well to combine.
Stir in flour, baking powder, salt, nuts, vanilla and rum.
Spread evenly in greased baking pan.
Bake for 20 to 30 minutes or until toothpick inserted in center comes out nearly clean, being careful not to overbake.
UDGY FUDGE BROWNIES
A chocolate lovers delight!
Brownies:
1 1/4 c. flour
1/4 c. cocoa
1 tsp. baking powder
1/2 tsp. salt
3 eggs
2 c.
sugar
3/4 c. butter, melted
1 tsp. vanilla
1 c. chopped walnuts (optional)
Stir together flour, cocoa, baking powder, salt and walnuts. Mix well. Set aside.
In large bowl, combine eggs, sugar, butter and vanilla. Beat with wooden spoon until smooth. Stir in dry ingredients; mix well. Spread batter evenly in 13 X 9 inch pan.
Bake in 350oF oven for about 25 minutes. Do not overbake. Brownies are ready when edges are just set and center is still soft.
Cool on wire rack
8- 1 ounce squares of unsweetened chocolate
1 cup butter
5 eggs
3 cups sugar
1 tablespoon vanilla
1-1/2 cups flour
1 teaspoon salt
PREPARATION:
Preheat oven to 375 degrees F. Grease a 9 x 13 pan.
Melt chocolate and butter in a saucepan over low heat; set aside. In a mixer, beat eggs, sugar and vanilla at high speed for 10 minutes**. Blend in chocolate mixture, flour and salt until just mixed.
Bake for 35-40 minutes. (Don't overbake.) Cool and frost if desired, but that is not necessary.
** It's not required, but this is when it's very nice to own a stand mixer.
Chocolate Glazed Brownies
1/3 cup butter or stick margarine-softened
1 cup sugar
3 egg whites
1 tsp vanilla
2/3 cup all purpose flour
1/2 cup cocoa
1/2 tsp baking powder
1/4 tsp salt
In a mixing bowl, cream butter and sugar. Add egg whites and beat well. Beat in vanilla. Combine the flour, cocoa, baking powder and salt, gradually add to creamed mixture. Spread into an 8 inch square baking pan coated with nonstick cooking spray. Bake at 350* for 20-25 minutes or until toothpick comes out clean. Cool on a wire rack.
Chocolate Glaze
2/3 cup powdered sugar
2 tbsp cocoa
1/4 tsp vanilla
3 or 4 tsp hot water
candy sprinkles-optional
In a small bowl, combine all of the above ingredients using just enough water to acheive the desired consistency. Spread over brownies. Decorate with candy sprinkles if desired. Cut into bars....Yield: 1 dozen
Fudge Brownies
1-13 cups all purpose flour
2 cups sugar
3/4 cup cocoa
1 tsp baking powder
1/2 tsp salt
1/2 cup chopped pecans
2/3 cup oil
4 eggs., lightly beaten
2 tsp vanilla
1 cup chopped nuts-optional
In a mixing bowl, combine the first six ingredients. In another bowl, combine the oil, eggs and vanilla, add to dry ingredients. Do not overmix. Spread in a 13 x 9 inch baking pan. Sprinkle with nuts if desired. Bake at 350* for 20-25 minutes or until toothpick inserted in center comes out clean. Makes 2 dozen...\
Buttermilk Brownies
1 cup margarine-softened
1 cup water or brewed coffee
1/3 cup cocoa
2 cups plain flour
2 cups sugar
1 tsp baking soda
1/2 tsp salt
2 eggs beaten slightly
1/2 cup buttermilk
2 tsp vanilla
Frosting
1/3 cup cocoa
6 tbsp margarine
5 tbsp buttermilk
1 tsp vanilla
1 tsp instant coffee crystals
3 cups powdered sugar
Preheat oven to 350*. Mix brownie ingredients and pour into a greased jelly roll pan. Bake for 30 minutes, Prepare frosting to be used when brownies are removed from oven. Bring frosting ingredients to boiling, stirring often. Pour into powdered sugar and beat until well mixed. Spread while brownies are hot. Cool at least 4 hours before cutting into squares.
Over the years I have made all of the above fairly often, they are all great. Hope you enjoy them....
