Extra-virgin olive oil means the oil was extracted from the olives during the very first, cold pressing of the olives. That produces the most full-bodied oil with the most intense flavor (it's also the most expensive).

Also, "extra virgin" could mean that the olives were really, really ugly.
It sounds like a sham to me.

Really, aren't olives all the same inside anyway?
