How do I keep cupcakes fresh?!
Answers: I'm having a party tomorrow and want to make my cupcakes tonight so I have less to do tomorrow morning (party is at 11am). Can I make them tonight (with icing and everything) and put them covered in tuppeware in the fridge? Or, should I just leave them out, covered still? One batch has M&M's on them and licorice and the other has gummy worms. Thanks!
if the cupcakes are already decorated with candies and then put in fridge the color may run off and the frosting will look spotted. You can also use Tupperware and not refrigerate as it's only one day.
Bake them but dont frost them. I would put them in tupperware and in the fridge but take them out early enough to be room temp when you frost.
1 ice-cream cone cupcake
Frosting or whipped topping
Sprinkles or jimmies
1 maraschino cherry
1. Preheat oven to 350 degrees.
2. Make the cupcakes by filling flat-bottomed ice-cream cones halfway with cake batter (no further or they will not cook thoroughly).
3. Place each cone in a mini cupcake baking tin for stability. Bake at the recommended temperature (350 degrees) for about the same time as cupcakes.
4. Using a pastry bag with a star tip, swirl the frosting or whipped topping on the cone like soft-serve ice cream.
5. Ask the "customers" if they want sprinkles or jimmies. Top with the maraschino cherry.
Don't put the cupcakes into a covered container of any kind until they have cooled entirely. If you cover them and then refrigerate, the warmth will cause condensation, and you'll have soggy cupcakes. If you have room in your fridge or freezer, you can put the cupcakes on a baking sheet, and put the whole works in the fridge for a couple of hours. THEN, when they're cold, wrap them in plastic. Although in your case, since the party is tomorrow morning, you could probably get away with leaving them unwrapped. They won't become stale or dry overnight.
And leave the icing/frosting until the last minute, if possible. Lots of things can affect the icing, including temperature and humidity in your house. If allowed to sit (iced) for a few hours, there's a chance the icing will either become "crusty", or slide off of the cupcakes. The additional decorations (Gummi worms, etc) can certainly be left until the last moment.
