How can you make a perfect pasta?!

Cajun Chicken Pasta:

Prep: 20 min. Cook: 20 min. Ready In 40 min. Serves 2

Ingredients
4 ounces linguine pasta
2 skinless, boneless chicken breast halves
2 teaspoons Cajun seasoning
2 tablespoons butter
1 red bell pepper, sliced
1 green bell pepper, sliced
4 fresh mushrooms, sliced
1 green onion, chopped
1 cup heavy cream
1/4 teaspoon dried basil
1/4 teaspoon lemon pepper
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon ground black pepper
1/4 cup grated Parmesan cheese
Cooking Instructions
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

Place the chicken and the Cajun seasoning in a plastic bag. Shake to coat. In a large skillet over medium heat, saute the chicken in butter or margarine until almost tender (5 to 7 minutes).

Add the red bell pepper, green bell pepper, mushrooms and green onion. Saute and stir for 2 to 3 minutes. Reduce heat.

Add the cream, basil, lemon pepper, salt, garlic powder and ground black pepper. Heat through. Add the cooked linguine, toss and heat through. Sprinkle with grated Parmesan cheese and serve.
I'm not trying to be funny but follow the directions on the package and you can't go wrong.
Your cooking it too long. You want to cook it , where it still is firm. If you have to try a taste test, after 9 mins or so.

You have over cooked you pasta when it goes soggy!

Boil the water first in a pot! when its boiled add the pasta with a little salt for seasoning stir a little then leave for about 5-10 then check again and stir also get a piece of the pasta and taste it! to see if its still uncooked of cooked they way you want it then drain off into a colander when ready walla
The one trick that I was taught is to undercook your pasta a couple minutes shy of what's recommended on the box. Then, continue cooking the pasta in your sauce for a couple of minutes until it's just al dente. I usually have my sauce simmering in a separate skillet and use a slotted spoon or tongs to transfer the cooked pasta from the water to the sauce. If it doesn't seem like there's enough sauce, you can use some of the pasta cooking water to add more liquid.

it depends on the type of pasta. they all cook different. here are some times i go by:

elbow macaroni - 10 min for generic brand or 12-13 min for name brand

angel hair pasta - 6 or 7 minutes

shells - 12-13 min

rigatoni - 12-13 min

spaghetti - 10 min

for long, thin pastas like spaghetti & angel hair, a good way to tell if its done is to take a piece and throw it against your wall. if it sticks to the wall, its done. if not, cook for a couple more minutes.
