This one's from Emeril Lagasse!
Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.
Yield: 2/3 cup

cajun salmon, bake in the oven, or cajun chicken fried in a pan with butter
fry cut up sausage in a pan, fry in olive oil with some red onion, garlic, deglaze with red wine, add some whipping cream/double cream, then add some cajun seasoning, about a half tablespoon, add some pasta, thats pretty nice, a restaurant recipe.
I tried these cajun tots a while ago and they were pretty good. Just sprinkle on tater tots and serve with ranch dressing.
