I want to make a quiche without meat. Would black beans be good? Any ideas?!

Yes, Black beans are a great idea! At the cafe my hubby and I run we serve a very popular quiche with this ingredient. Use a standard egg mix, whatever shell is easiest for you, add black beans, diced sauteed onion and green peppers, cheddar and a bit of pepper jack cheese. I like to experiment with the bags of frozen vegetable mix.
I have not ever tried black beans in quiche. I have made many quiche without meat. Here are the ingredients of one of my favorites. If you do not like garlic, you may eliminate it.
3 cloves garlic
1 small onion
1 pkg frozen spinach
1 can mushrooms (or dice fresh mushrooms)
1 pkg shredded cheddar cheese
salt & pepper to your taste
4 eggs
1 cup milk
Broccoli and mushrooms go well together in a quiche. I like to throw in some red onion as well. Tonight, I threw in some crushed red pepper flakes as well.
i suppose, or try a 3 cheese quiche or spinach and mushroom and cheese quiche, or a veggie quiche with cheese. broccolli and cheese is good.
You can make a quiche with anything really. I don't think I would care for a black bean quiche, but whatever floats your boat.

Try spinach or broccoli with cheese. You can experiment with different kinds of cheeses. Such as cheddar, swiss, fontina, parmesan, etc. You can use mushrooms.

You might also want to experiment with the crust as well. I've used puff pastry in place of a 9inch pie crust before. I just rolled it out, and shaped it in my pie plate, and prebaked it.

I make an awesome broccoli bacon and cheese quiche.
Try using portabella mushrooms. They are great, they have a very robust flavor with out being overpowering and they go well with everything!
That could be interesting as a mashup of beans and garlic used as a crust. Personally, if doing a veg quiche, I just put in mushrooms along with the usual ingredients
