This is a recipe that evolved over time when I owned a cafe in Queensland Australia. You are the first to have been given it. The ingredients given are for about 6 servings.

Tropical Chicken Salad
Mix together 300 grams of Rocket, 2 big double-handfuls of shredded chicken, 150 grams of walnuts broken apart or roughly chopped, 250 grams of seedless grapes (green or red) OR chopped fresh mango, 1 cup roughly cut fresh basil leaves.

Mix together with dressing of about 2/3 cup mayonnaise, 2/3 cup sour cream, 1/2 cup “Palms” Mango & Paw-Paw Chutney, and 2 teaspoons curry powder.

Grilled shrimp skewers with bell pepper and onions. Marinate the shrimp with olive oil, cilantro, garlic, pepper and green onions a little lime juice for about an hour. Then skewer them up with generous slices of pepper and onions and grill them for 3 minutes a side.
The beauty is that the cold shrimp leftovers make a great next-day snack by the pool.

Easy and really good
hm mm. . . lets see, I don't want to say salad cause that's what pretty much everyone is thinking! So. . . let's see. . . if you don't mind a bit of cooking, you can make all sorts of things!! How about some salmon with lemon and onion with asparagus on the side? It's really quick, it takes less time than it sounds. and it's really delicious and easy!

2 salmon fillets (5-6 oz each)
1 small onion
1 large lemon halved and sliced thin
2 pieces of aluminum foil (big enough to wrap around salmon and extra stuff)

1 bunch of asparagus
asparagus sauce:
(1 tablespoon of butter
splash of hot sauce
the following add to taste: lemon and pepper seasoning, lemon or lime juice, and grated Parmesan cheese)

Preheat oven to 325 degrees F.
Place onions on foil, place salmon on top, lay lemon slices on top of each fillet. Sprinkle all lightly with sage and salt and pepper. wrap and cook until salmon flakes easily with a fork.
while salmon is cooking, boil or steam asparagus until slightly crispy and drain. while it's still hot, place in serving dish and add the following items on top of the asparagus. gently stir and serve when salmon dish is done.
FRUITY COLESLAW:
More shredded green cabbage & than red cabbage.
Can of mandarin orange segments, drained.
Medium cooking apple, peeled cored, & diced.
Toss in a large bowl.
Dressing:
1/2 cup sour cream, 1/8 cup orange juice, 1 tbsp liquid honey,
1/2 tsp orange zest, 1/2 tsp celery seed, salt, pepper.
Combine (makes 2/3 cups) drizzle over salad, toss well.
Chill before serving with slotted spoon, to drain liquid.

TOMATO BASIL PIE:
Saute 1 cup green pepper & 1 cup onion (chopped) in butter.
Cook 5-10 minutes, until soft, spread in unbaked pie-shell.
Beat 3 lg eggs, 1/2 mayo, 1 tbsp flour, salt/pepper.
Pour over onion/pepper mixture in pie-shell.
Sprinkle 1/2 cup fine dry bread crumbs & 3 tbsp basil.
Bake on bottom rack at 350F for 30 minutes, until set.
Remove from oven, layer with 2 sliced tomatoes,
Alternate with Swiss cheese strips, overlapping.
Bake another 25 minutes, until golden & melted.
Remove & let stand for 10 minutes to cool.
