Peppers? Please give suggestions.?!
Answers: I have a bunch of fresh garden peppers red, green, and banana peppers. I would like to use these so they don't go bad. This will be the last bunch I will be able to get this season and need some suggestions about recipies for them to be used. My house consist of just my husband and I. I have thought of sauting up some and freezing them but I haven't done this so if anyone also has any ideas on how to make sure they will be good after freezing that would be great. Thanks in advance for reading my long question.
Freezing peppers fresh will cause the cells to burst, and the product is undesirable. Saute followed by freezing is undesirable because of the coagulated grease or butter fats in the product. Your best bet is to roast the peppers in an oven set to "broil", turning the peppers constantly until the peppers are evenly charred on the outside. Then put them in a clean paper bag for about 15 minutes. (this old trick will help separate the skin from the meat), Using a steak knife to help get under the skin, pull as much of the skin as you can. You are now the proud owner of roasted peppers, which are freezable without any detrimental effects, and a lot of us chefs like to use them in cream sauces.
One that comes to mind is a recipe I used for a cat fish dish not too long ago. Season your cat fish with cajun seasonings and fry it in a hot skillet and serve it with this sauce...
Take your roasted peppers out of the freezer and thaw them. Combine the peppers with some yellow onion, a little roasted garlic, and a squirt of lemon in a blender and let her rip adding some heavy cream until it is smooth. Warm it up to a boil in a saucepan adding salt and white pepper to taste as well as a little more cream if you want, but definitely a dash of a good white wine. Thicken the sauce if need be, but if you boil it long enough it will thicken by itself. Whip in a little butter to richen the sauce and lay it on the plate. Put your cajun cat fish on top of that, and top that with a roasted corn salsa and you have yourself an award winning dish :) I should know.

you can just cut them in big chunks and freeze them in good freezer bags - raw

Just put them in plastic bags and freeze them. There is no trick.
If you want you can cut them for easy use later.

If the banana peppers are big enough you could stuff them with queso blanco (mexican cheese) and roast them. Like what you would do with a poblano
If you freeze them straight away after you pick them they will be ok. it locks in the goodness and vitamins. but they may loose a bit of thier flavour.

We always chop up bell peppers and freeze them for later use.
The hot peppers we put in a jar with vinegar and keep it in the fridge.
Banana peppers get eaten on salad, burritos, sandwiches and anything else on a plate, so there are never any left to try to store anyway!
Blanch them then you can freeze them if you saute them they will go bad quicker. Fajitas are a great way t ouse the red and green ones, the banana peppers you can use for a kick.
I have cleaned them then cut them up and placed them in ziploc freezer bags raw and they came back out perfect. This way when your ready to use them they are in their pure state so that you can do anything with them, including salute them.
You don't even need to sautee them first; you can just slice or dice and then freeze until later. Or, you can make stuffed peppers (wonderful!); or even have italian sausage subs with peppers and onions (deelish!!).
No don't freeze them, can them or dry them in a food dehydrator. If you dry them they'll keep indefinitely.
Freezing some of them will be all right but you'll want to use them within the next month or so.

I buy peppers from Trader Joes frozen all the time
I wouldn't saute them up first before you freeze, if that's what u meant.
I would cut em up julianed or in chunks and put them in a sealed ziploc bag.
I use them for a quick fajita meal all the time.
you don't have to cook them first, I don't. I always take my colorful peppers and chop them small, and freeze. I can then take a handful and add to things like spaghetti sauce, southwest omelettes, etc. They do get mushy if thawed and put into a green salad, but potato salad is fine.
You can also keep them by cutting out the seeds and putting them in a jar with 1/3 vinegar and 2/3 water and some salt. They keep "fresh" this way in the fridge for quite a while.
with some types of peppers you can keep them for a long time, til they go from green to red to dried up, and still use them.
You can cut them & freeze them Raw.
Or you can make Stuffed Peppers for Dinner tonight & then freeze some of the left over stuffed Peppers for another dinner in a efw weeks!
you can blanch them for about 30 seconds in salted boiling water...then freeze in a flat layer on a cookie sheet. once frozen, transfer to freezer bag....then thaw...and serve with this sauce (and some pasta):
1/2 c balsamic vinegar
1c dry red wine
1 shallot, minced
2 sticks of butter, ice cold, cut into chunks
salt and pepper
Reduce the vinegar and wine with the shallot until about 6 Tbs remain in pan...turn heat to med-low, whisk in butter all at once and vigorously...until all butter is melted and sauce is satin-y. Season to taste with salt and pepper. This is so excellent with a great loaf of crusty bread and a nice salad.
