Help me make dinner!?!


Question: i have turkey breast, rice, egg noodles, cream of mushroom soup, chedder broc. soup, carrots celery, potatoes, garlic an assortment of marinades and herbs. help! i'm cooking for two, i thought maybe i could take a chicken breast recipe and do the same things to the turkey?

You can take the chicken breast recipe and do the same things to the turkey breast. Both are poultry. Go for it and enjoy!!

Brown Rice Turkey Soup

1 cup diced sweet red pepper
1/2 cup chopped onion
1/2 cup sliced celery
2 garlic cloves, minced
2 tablespoons butter or stick margarine
3 (14.5 ounce) cans reduced sodium chicken broth
3/4 cup white wine or additional reduced-sodium chicken broth
1 teaspoon dried thyme
1/4 teaspoon pepper
2 cups cubed cooked turkey breast
1 cup instant brown rice
1/4 cup sliced green onions

In a Dutch oven, saute the red pepper, onion, celery and garlic in butter for 5-7 minutes or until vegetables are tender. Add the broth, wine or additional broth, thyme and pepper. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Stir in turkey and rice. Bring to a boil; simmer, uncovered, for 5 minutes or until rice is tender. Garnish with green onions.
Start with one of the soups, Use the turkey breast and cook with some of your herbs, and you've got 3 options, mashed/roasted potatoes, Rice, or Noodles, i'd use the rice. Then do a carrot and celery, garlic mix.
Anything you can do with chicken or pork, you can do with turkey. It gives a new twist on an old favorite.
You definitely could do the same thing you do with chicken.
Here is a recipe I found for Turkey Noodle casserole that is delicious.
INGREDIENTS:
1 package (10 ounce) frozen peas, thawed under cool running water
2 cups diced cooked turkey (or ham)
1 1/2 cups cooked noodles
butter
1/4 cup chopped onion
8 ounces sliced mushrooms
1 can (10 1/2-ounce) cream of mushroom soup
1/2 cup milk
salt, to taste
1/4 teaspoon curry powder
1/2 teaspoon poultry seasoning
1 cup shredded Cheddar cheese
PREPARATION:
Combine turkey, noodles, and peas in a buttered 2-quart baking dish or casserole. Melt 2 tablespoons butter in a saucepan. Sauté onion and mushrooms until tender; blend in soup, milk and seasonings and cook, stirring, until well blended and hot.
Pour soup mixture over the turkey and noodle mixture; top with shredded cheese. Bake in a 350° oven for about 25 to 30 minutes, until hot and bubbly.
Serves 4. If you only need it for 2 you could cut the recipe in half or have left overs for another day. Good luck
Egg Noodles with Turkey

2 to 3 cloves minced garlic
1/4 c. extra virgin olive oil
1/2 to 3/4 lb. turkey breast, cut into strips
1 1/2 to 2 c. broccoli (frozen can be used)
3/4 c. Sun Dried tomatoes
1 tsp. basil
Pinch red pepper flakes
1/4 c. white wine
Salt and pepper to taste
3/4 c. chicken broth
1/2 lb. egg noodles
1 tbsp. margarine

Saute' garlic in oil, add turkey strips until white, add balance of ingredients. Cover, simmer 5 to 10 minutes. Mix together. Cook pasta as per package directions. Drain and add to above mixture and stir. Let it sit for 5 minutes before serving.
